  • bump - i made those black bean brownies a long time ago and they were good! Just didn't realize i had to put em in the fridge. they were GROSS by day 2! HAHAHAHA

    Now - Mind you, I was very young (early 20's) and really had never done much cooking before that (eating out a lot - leading to having to lose a lot of weight)

    I am older...and a tiny bit wiser. :)

    Quinoa and Black Beans
    1 tsp olive oil
    1 C of the holy trinity (bell pepper; celery; onion)
    3/4 C quinoa
    1 1/2 C vegetable broth
    1 tsp cumin
    pinch of cayenne pepper
    1 C frozen corn kernels (I use Tex-Mex Steamer canned)
    2 cans black beans (rinsed and drained)
    1/2 C chopped fresh cilantro
    1 TBS chopped garlic
    Saute veg, mix in quinoa, add veg broth and seasoning. Cover, reduce heat and simmer until quinoa is
    tender. Stir in corn , black beans and cilantro. I further season with Nature's Seasoning to taste.

    My favorite for months now has been my version of the Chocolate Black Bean Brownie Smoothie:

    1 can black beans, drained and rinsed
    1 small or 1 very large banana
    2 T. cinnamon
    3 T. unsweetened cocoa powder
    3 c. Silk Original soy milk

    Puree and serve. Makes 3 servings. Loaded with protein, calcium, iron, and potassium, but tastes like dessert.

    I put them in my salad or make black bean brownies. Salad is quick. Chop up some romaine, 1/4 avocado, fresh salsa, 1/4 cup brown rice, 1/4 cup black beans , chopped up tomatoes, some red onions and a bit of sour cream as the dressing. I also throw in some grilled chicken or pork to increase the protein. Then top with a tablespoon of grated cheese. Super filling!

    black bean cakes with mango salsa-
    makes 8 cakes - serves 4 ( 2cakes per person)

    mango salsa - make this first and chill

    2 cups mango, peeled & diced
    1/2 cup red bell pepper, minced
    1/4 cup red onion, finely minced
    1 serrano pepper, seeded & chopped
    2 Tbsp. fresh cilantro, coarsely minced
    2 tsp fresh ginger root, chopped
    1 Tbsp. lime juice

    black bean cake mixture

    2 x 15 ounce. cans black beans, rinsed & liquid removed
    1/4 cup fresh cilantro, minced
    1/4 cup red onion, finely minced
    1 egg white (or possibly substitute), slightly beaten
    1 tsp ground cumin
    1 tsp garlic, chopped
    1/2 tsp ground allspice
    1/8 tsp cayenne pepper

    1/3 c. whole wheat bread crumbs
    nonstick cooking spray
    1 Tbsp. extra virgin olive oil

    Directions

    1.Combine all mango salsa ingredients (first 7 ingredients) in a bowl and set aside.

    2.For the black bean cakes, place beans in a large bowl and coarsely mash till they stick together. Add in cilantro, onion, egg white, cumin, garlic, allspice, and cayenne pepper. Mix till well blended.

    3.Divide bean mix into 8 equal parts. Shape into 1/2" thick patties. Coat patties with bread crumbs. Spray both sides of patties with nonstick cooking spray.

    4.Heat oil in a skillet over medium-high heat. Add in bean cakes and fry till golden on both sides, turning once, about 8 min total.
    Serve hot with Mango Salsa. Garnish with cilantro and lime wedges, if you like.

    per serving = 2 cakes (or 212 per cake)

    Perhaps not adventurous but I am a huge fan of a black bean salad. Toss a can of black beans, can of kidney beans and can of garbanzo beans (all drained and rinse) with chopped onion and a vinaigrette type dressing. Let sit in the fridge at least overnight I use a cup as a tasty and filling lunch. Sometimes I add avocado.

    BROWNIES!!!! CUPCAKES!!!

    I am not vegan or anything. But my friend made me black bean cup cakes once and gaaaahhh they were the best chocolate cupcakes I've ever had.

    I like something really simple.

    1/2 cup Black beans cooked
    1/2 cup Brown rice, or quinoa, cooked
    1 to 2 tbsp Sweet chili sauce

    Makes a really quick snack

    my first thought when reading this was;....black bean smoothie! how gross.
    my second thought was; hmm i have first four ingredients, wonder if unsweeten vanilla almond milk will work too!
    seriously not sure why i want to do so but, i must now try this recipe out.. thanks for sharing.
