    Wicked Easy Spicy Chicken

    1 Jar of Salsa
    3-4 Chicken Breasts

^that is all you have to put it... and it tastes great... served on a salad, shredded on a bun with cheese and veggies, or just eat it as is!

I also like to add (sometimes), 1 Bud Light Lime, onions, red and green bell peppers, extra spice (franks red hot, etc)...

Cook on low for 6-8 hours, or on high for about 3.... (it really depends on how much chicken you use and your crock pot)

    Rice with Beef Stew Meat

    6 oz beef stew meat
    2 cups beef broth
    2 Tablespoon lemon juice
1\2 finely chopped red bell pepper
1\2 minced red onion (any kind would do, I just always have red onions on hand)
    3 cloves roughly chopped garlic
Whatever spices you want (I use salt, lemon pepper for my husband, paprika, basil, and oregano)
1 head of broccoli or cauliflower
    __________________________________________________________________________________________________

Put all but the broccoli in the crockpot. Set on low for 7 hours or high for 5. 30 min before done add the broccoli. Serve over rice. Sometimes I add a bit of flour to the liquid in the pot to thicken it so I get a nice sauce. Serves 4 - 5 people.

3 cooked and shredded chicken breast
    1 jar salsa
3 cans of white kidney beans (rinsed and drained)
    2-3 cups of chicken broth

Cook on High 3-4 hours or low 6-8.
It's consider White chicken chili, but I think it's more like a tortilla soup when you add all the extras my hubby adds.
Top with tortilla chips, shredded cheese, and a bit of sour cream.
(I eat it plain to keep it healthy.)

    Chicken Fajitas.

4 4oz boneless, skinless chicken breast
    1 sliced bell pepper
    1\2 sliced red onion
    2 cloves garlic, well chopped
    1\2 pkt taco seasoning
    2 cups water
    __________________________________________________________________________________________________
You can either roughly cut up the chicken or leave it in whole. Add everything to the crockpot cook on low for 6 hours. If you didn't chop the chicken, carefully pull it out and shred. Put back in the pot for about 30 more min. lightly strain. Excellent with fajita sized tortillas, low fat mexican cheese, and a heaping tablespoon of fat-filled delicious sour cream. I have yet to find a yummy low fat sour cream, but you could sub it if you have one that doesn't taste like crap. This one makes everyone happy at my house and I have extremely picky eaters.

    Hot sauce chicken.

Got this one somewhere on this site, but it is so delicious that it bears repeating over and over and over again!

    3 to 4 4oz boneless skinless chicken
    1 cup hotsauce
1 pkt dry ranch dressing mix.
    __________________________________________________________________________________________________

Add all to crockpot. Cook on high for 4 hours or low for 6. I prefer low just because it tastes better somehow to me. Remove chicken and shred add back to pot. SO yummy in a 100 cal pita pocket with a diced mozzarella cheese stick mixed in or on a piece of lightly toasted bread.

    Beef Ribs

6 oz boneless beef ribs. (I use beef rib tips)
    1 cup beef broth
4 Tablespoon your choice of bbq sauce
    3 cloves garlic, finely minced.
    __________________________________________________________________________________________________
Add all to crockpot on low for 7 hours. It helps with the rib cravings that I get. Serves 4-5.

Edit to say that you could use pork if you so desire...but I don't because I can't stand pork unless it is practically burned bacon.
