    Potato soup

    1 30oz frozen shredded hashbrowns
    3 14oz chicken broth
    1/2 cup onions chopped
    1 can reduced sodium cream of chicken or cream of mushroom
    1 package cream cheese cubed
    1/4 tsp ground pepper

    Combine all in crockpot. Cook on low 8 hours. Top w/shredded cheese, bacon, green onions. YUM.

    The soup is 175 cals/cup.

    I did a similar version yesterday.

    I bag frozen diced potatoes
    4 cups chicken broth
    2 cups milk, I used skim
    2 cups reduced fat cheddar
    Half an onion, I sauted them lightly before adding

    Add milk and cheese for the last hour or two. I did three hours on high but it depends on your slow cooker. I also adds garlic, red pepper flakes, parsley and salt and pepper. Top with bacon or add ham. Super easy and good comfort food.

    Be sure to check Pinterest. They have a lot of crockpot recipes. I modify some of them to make them healthier choices. Using the recipe builder on My Fitness Pal helps monitor calories, fat, protein, etc. I love this program.

    Let me give you a REAL recipe for crockpot Chicken Curry. If it contains and apple and one spice, it is NOT chicken curry.


    3 pounds boneless, skinless chicken breast
    2 medium red onions, halved and thinly sliced
    7 garlic cloves, thinly sliced
    1/4 cup of minced ginger
    2 tablespoons curry powder
    1 teaspoon ground coriander
    1 teaspoon ground cumin
    Coarse salt
    2 packages frozen green peas (10 ounces each)
    2 cups coconut milk
    2 tomatoes, diced
    2 carrots, diced
    1/4 cup cilantro leaves (optional, for serving)
    Directions

    In a 5-quart slow cooker, toss chicken, onion, garlic, ginger, curry powder, coriander, and cumin to coat. Season with 2 teaspoons salt. Cover, cook on high setting until chicken is fork-tender, about 4 hours (do not uncover while cooking).
    Stir in coconut milk, carrots, tomatos and peas; cover, cook until peas are heated through, about 20 minutes.
    Transfer chicken to a large bowl; shred with fork. Return to pot; toss with sauce.
    To serve, garnish with 1/4 cup fresh cilantro leaves, if desired.

    This one looks yummy too - the one I posted is from a Crockpot recipe book - meals with less than 5 ingredients. It's quick to put together and simple, but I do add other things too - I think the coconut milk and all the extras would be SUPER yummy!!! Thank you for the awesome recipe!

    Found a yummy dessert recipe for the crock:

    4 large baking apples
    1 tbsp lemon juice
    1/3 cup chopped dried apricots
    1/3 cup chopped walnuts or pecans
    3 tbsp packed light brown sugar
    1/2 tsp ground cinnamon
    2 tbsp melted butter or margarine

    Scoop out center of each apple. Mix apricots, nuts, brown sugar, and cinnamon in a bowl. Add butter and mix well. Spoon mixture evenly into apples.
    Pour 1/2 cup water in the bottom of crock pot. Place 2 apples in the water and arrange the other 2 apples above but not directly on top of the lower apples.
    Cover and cook on LOW 3-4 hours or until apples are tender.


    Spinach Gorgonzola Corn Bread

    2 boxes cornbread mix (8.5 oz mixes)
    3 eggs
    1/2 cup cream
    1 box (10 oz) frozen chopped spinach, thawed and drained
    1 cup (4 oz) crumbled Gorgonzola
    1 tsp black pepper
    Paprika (optional)

    coat crock pot with nonstick cooking spray. Mix all ingredients in bowl. Place batter in crock pot, cover and cook on HIGH 1 1/2 hours. Sprinkle with paprika. Let cool completely before serving. Makes 10-12 servings.

  • Sorry that I don't have quantities or times. I tend to do things by eye/taste bud.

    Tomato Barley Stew with spicy sausage:

    Put tomatoes in pot (with water) until soft, then run through blender and return to pot (keep water in pot).
    Add rinsed barley to the mix and let it cook until almost done before adding other ingredients.
    Brown spicy sausage in frying pan and then add to the pot.
    Also add (eventually): chopped garlic, any veggies you have around (I like carrots and red cabbage), finely diced ginger (just a bit!), black pepper, a little salt.

    Cashew, Chicken, Quinoa stew:

    I think you can use any part of the chicken here, but I have been using legs as I have them in the freezer and haven't found a way I like to eat them better than this.

    Cook chicken in the pot until it is falling off the bones. Remove bones, keep broth in pot, return meat to pot.

    Add rinsed quinoa to the pot (remember, it also expands).

    Once the quinoa is at least somewhat cooked add:

    Cashews (in powder form- put through blender- maybe 1/4-1/2 cup?)
    Carrots
    Green beans
    Quartered (or smaller) red potatoes
    Red cabbage
    Raw garlic (chopped)
    Raw ginger (chopped)

    Yum!
