  • French Dip Sandwiches

    One beef roast
    1 can beef consume
    1 can beef broth
    1 can french onion soup
    Salt and pepper to taste
    1 tsp minced garlic(because I add garlic to almost everything)
    2 tsp worchestire sauce

    Place all in crockpot, cook on low for approximately 8hrs, serve on whole wheet sub buns, and use the liquid as your dip.
    This is great for nights we have soccer practice or game, or I just don't wanna stand at the stove/oven, kind of meal.

    BBQ Pulled chicken (kinda like pulled pork)

    6 boneless skinless chicken breast
    1 bottle of your favorite BBQ sauces
    1 box of low sodium Chicken broth

    mix BBQ sauces and broth in crock pot. Hint " use the broth to get all the sauce out". Then add the chicken breast let it cook 6-8 hours and server. Just pull it a part when it tender.

    We have used rice, tortilla and buns.

    I know there is already a taco soup, but this is my version. It's really a good soup and it freezes well.

    Tasty Taco Soup

    1 pound ground beef or turkey cooked
    1 large yellow onion chopped
    1 pkg taco seasoning
    1 pkg dry ranch dressing mix
    1 28oz can diced or stewed tomatoes
    1 15 oz can garbanzo beans, drained
    1 15 oz can pinto beans, drained
    1 15 oz can red or kidney beans, drained
    1 15 oz can navy beans, drained

    Brown the meat with the onion until cooked through. Drain. Mix in taco and ranch dressing seasonings. Add the diced tomatoes, and all of the beans. Mix in enough additional water to cover everything. Simmer until heated through.

    Serve with tortilla chips, cheese and sour cream.

    This recipe is also great as a vegetarian soup. My family loves to eat to on nights when we need something fast to fix. Instead of spicy chili which doesn’t always agree with my husband, I make this soup which still has a kick. People always comment on how wonderful it tastes. Hope you like it.

    I will have to try this. I am not a big fan of corn in Taco soup.

    Best crock pot recipe I've ever found

    SLOW COOKER CHICKEN POSOLE (Weight Watcher's Recipe)
    1 clove(s) (medium) garlic clove(s), minced
    4 oz frozen mixed vegetables, onion, pepper and celery mixture (about 1 cup)
    14 1/2 oz canned hominy, drained
    4 oz canned jalapeno peppers, mild-variety, diced, drained (adjust this if you don't like HOT! food)
    14 1/2 oz canned diced tomatoes, with smoked chipotle chiles (do not drain) (hard to find - you can sub in tomatoes w/green chilies)
    1 pound(s) uncooked boneless, skinless chicken thigh(s), cut into bite-size pieces (I just toss them in whole - they will fall apart anyway - I even start this with frozen thighs if I have forgotten to thaw and it comes out just fine)
    1 cup(s) fat-free chicken broth
    1/2 tsp table salt
    1/2 tsp ground cumin
    1/4 tsp black pepper
    1 medium fresh lime(s), cut into 4 wedges (optional)

    Instructions
    Place garlic, frozen vegetables, hominy, jalapenos, tomatoes with their juice, chicken, broth, salt, cumin and pepper in a 4- to 5-quart slow cooker; stir. Cover and cook on high heat for 4 to 5 hours or on low heat for 7 hours.


    Spoon posole into 4 bowls and garnish each serving with a lime wedge. Yields about 1 1/4 cups per serving.
  • Chicken(or turkey) tortilla soup. This is really good to use that left over Thanksgiving turkey in

    1 Roatisseri chicken--deboned and skin taken off
    1 box low sodium chicken broth
    1 cup frozen corn
    2 cans Rotel, with juice(you can use hot or mild)
    1 cup salsa
    Salt and pepper to taste

    let cook on low for 4-5 hours, serve over baked tortilla chips, topped with low fat sour cream and a little shredd cheese.

    sounds wonderful, I will need to take out beans when our son is home he has alergies to beans and all nuts. I would sub. corn but it has corn in it so for his maybe whole wheat pasta or brown rice?

    Venison Chili-
    2 pounds cubed venison
    Tomatoes
    Green Peppers
    Jalepeno
    Yellow onion
    Hot chili beans
    Tomato juice
    Garlic (2 cloves)
    Basil
    Salt
    Pepper
    Crushed red pepper
    Cumin
    Thyme

    I brown two cloves of minced garlic in EVOO, then dice up and add my onions and jalepeno (sans seeds!), let them caramelize a little then add the venison and some salt and pepper and brown the venison.
    In the slow cooker, I pour the tomato juice, diced tomatoes and green peppers, cumin, basil, crushed red pepper, salt and pepper.
    Add the venison and let it cook a minimum of two hours (4 is better).
    After a couple of hours, I taste it and add more spices as needed. The cumin, thyme, red pepper, garlic and basil give it a great "chili" taste that is so much better than packaged chili powder.
    I really like to play around with the spices and will sometimes add a slight touch of cinnamon as well. A lot of these spices really get your metabolism revved up!

    Barbeque pulled Chicken

    4-6 chicken breast
    1 bottle of Sweetbaby Ray's bbq Sauce
    1/2 of coke (can be diet or coke zero) for less calories

    Put all the ingredients in the crock pot at the same time and let cook for 5-6 hours on med. When it is done, we just pull the breast apart, put on a toasted bun, add cole slaw, and extra bbq sauce!!! It's great and kids love it.......

    Easy Chicken Curry!!!

    1 whole chicken cut up, skin and fat removed completely
    1 onion chopped up
    1 tbsp Garlic powder
    1/2 tbsp Ginger powder
    2 tbsp Curry powder ( spicy is good!)
    1 14 oz can of diced tomatoes
    1 tbsp of butter or olive oil or coconut oil
    chopped Cilantro


    Mix the curry powder in one cup of water until dissolved.
    Pour over chicken in the crock pot.
    put the rest of the ingredients in, making sure its well distributed ( i stick my hands right in the crockpot and mix it all up

    Cook on high for 4 hrs or until meat falls apart and the gravy is not watery.

    Add chopped Cilantro when its done. OOooo the gorgeous aroma!!!!!:heart::heart: :heart: :heart:
