I Love This Thread! Cuz I am a crock pot meal lover!! Toooo Easy for us Non cooks ;-) Thanks for all the GREAT IDEAS!!
My contribution....
Turkey Soup
1/2 a Jenni O Boneless Turkey Breast
2 Cups Egg Noodles (add AFTER the turkey is falling apart) - then cook for another couple hours on low
2 Containers Swanson NO SALT added chicken broth (plenty of sodium in the turkey for flavor - so this helps keep it lower)
1/2 - 1 Onion cut up in rather large slices - (or small) - its mostly for flavor for me...
Shred the turkey after 8 hrs or so....its falling apart anyway
And My other Fav (other than the typical pot roast)
Chili
1 Can Black Beans - Drained
1 Can Light Red Kidney Beans
1 Can Pinto beans - drained
1 - 2 Cans Rotel
1 packet mild or medium or hot - taco seasoning (your choice obviously - (low sodium is a plus)
1 packet ranch dip mix
Simmer for a few hours....awesome!!0 -

Today I made this for the boys-
Beef Stoganoff
Prep Time: 15 minutes
Cook Time: 6 hours
Total Time: 6 hours, 45 minutes
Yield: 4 servings
Ingredients
1 1/2 lbs beef stew meat, cut into cubes
salt and pepper
2 teaspoons paprika, divided
1 tablespoon vegetable oil
2 cups sliced mushrooms
2-3 shallots, thinly sliced
1 1/2 cups beef broth
1/2 cup sour cream
chopped fresh parsley
Instructions
Sprinkle the beef with 1 teaspoon of the paprika and season with salt and pepper. Heat the oil in a large skillet over medium-high heat. Add the beef and cook until browned on all sides. Transfer to a slow cooker.
Add the mushrooms and shallots to the skillet. Sprinkle with the remaining teaspoon of paprika. Cook for 3 minutes; season with salt and pepper. Add in the beef broth and sour cream and cook for 2 more minutes, scraping up any of the browned bits on the bottom of the skillet. Pour the mixture over the beef in the slow cooker and cook until beef is tender, about 6 hours on low.
Sprinkle with chopped parsley and serve with egg noodles.
I turned mine off after 4.5 hours, my beef was in pretty small pieces0 -

Chicken Parmesan
2 to 4 boneless, skinless chicken breast halves
1/2 cup Italian Seasoned Bread Crumbs
1/4 cup Parmesan Cheese
1/4 t black pepper
1/4 t kosher salt
1 TBSP olive oil
1 egg, beaten
sliced or shredded mozzarella cheese
favorite jarred marinara sauce
Spread the 1 TBSP of olive oil into the bottom of your crockpot stoneware insert.
Beat the egg with a fork in a separate bowl.
Mix the bread crumbs with the seasonings and the Parmesan cheese in another separate dish.
Dip the chicken into the egg, then into the bread crumb mixture, coating both sides with crumbs, cheese and seasonings.
Place the chicken breast pieces in the bottom of the crockpot.
Layer 2-3 slices or 1-2 cups of mozzarella cheese on top, depending on how much cheese you like.
Cover chicken and cheese with entire jar of marinara sauce.
Close lid and cook on low for 6-7 hours or high for 3-4.
Serve with your favorite pasta.0 -
Pumpkin Chicken White Bean Chili~ It is the season and this is really good!
Only 180 calories and 3g of fat per cup
Brown 1lb 99% lean ground turkey
1/2 tsp olive oil
1 small onion, chopped
3 garlic cloves, minced
1 tsp chili powder, to taste
2 bay leaves
2 tsp cumin
1 tsp oregano
1 or 2 (15 oz cans) of white northern or navy beans, rinsed and drained
15 oz can pumpkin puree (not pumpkin pie filling)
4.5 oz canned chopped green chile
2 cups low sodium, fat free chicken broth
fat free sour cream for topping (optional)
chopped cilantro and chives for topping (optional)
salt and pepper to taste
Brown the ground chicken in a pan. Add beans, broth, pumpkin filing, green chile, and seasonings except the cumin into your slow cooker. Saute the onion and garlic with the cumin and olive oil for 3-4 minutes. Add the ground chicken and sauteed onion and garlic to the slow cooker once its ready. Slow cook on high for 3 to 4 hours, remove bay leaves before serving.
I added chili powder, garlic powder, pepper, and onion powder to the ground chicken while browning it because I like lots of flavor.

Found a yummy dessert recipe for the crock:
4 large baking apples
1 tbsp lemon juice
1/3 cup chopped dried apricots
1/3 cup chopped walnuts or pecans
3 tbsp packed light brown sugar
1/2 tsp ground cinnamon
2 tbsp melted butter or margarine
Scoop out center of each apple. Mix apricots, nuts, brown sugar, and cinnamon in a bowl. Add butter and mix well. Spoon mixture evenly into apples.
Pour 1/2 cup water in the bottom of crock pot. Place 2 apples in the water and arrange the other 2 apples above but not directly on top of the lower apples.
Cover and cook on LOW 3-4 hours or until apples are tender.
Spinach Gorgonzola Corn Bread
2 boxes cornbread mix (8.5 oz mixes)
3 eggs
1/2 cup cream
1 box (10 oz) frozen chopped spinach, thawed and drained
1 cup (4 oz) crumbled Gorgonzola
1 tsp black pepper
Paprika (optional)
coat crock pot with nonstick cooking spray. Mix all ingredients in bowl. Place batter in crock pot, cover and cook on HIGH 1 1/2 hours. Sprinkle with paprika. Let cool completely before serving. Makes 10-12 servings.
Yum! I want to make this corn bread, but will modify it so it's low cal...let's see how it goes!!!!0 -
~Bourbon Chicken~
2.5 lbs chicken tenderloins
1 clove fresh garlic minced
1/4 tbsp grated ginger
3/4 tbsp red pepper flakes
1/2 cup no sugar added natural apple cider
1/3 cup brown sugar
2 tbsp ketchup
2 tbsp cider vinegar
1/3 cup low sodium soy sauce
1 cup water
Toss everything in the crock pot, and stir. Cook on low for 4-6 hours. I serve over rice. You can add 1 cup water, and 1 cup instant brown rice the last 20 minutes of crock pot time.0 -
