    Crock Pot Chicken Taco Chili
    Gina's Weight Watcher Recipes
    Servings: 10 • Size: 1 1/4 cups • Old Points: 3 pts • Points+: 5 pts
    Calories: 203.7 • Fat: 1.4 g • Carb: 33.3 g • Fiber: 10.0 g • Protein: 16.9 g

    Ingredients:

    1 onion, chopped
    1 16-oz can black beans
    1 16-oz can kidney beans
    1 8-oz can tomato sauce
    10 oz package frozen corn kernels
    2 14.5-oz cans diced tomatoes w/chilies
    1 packet taco seasoning
    1 tbsp cumin
    1 tbsp chili powder

    24 oz (3-4) boneless skinless chicken breasts
    chili peppers, chopped (optional)

    1/4 cup chopped fresh cilantro
    Directions:

    Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream

    Sweet Potato Burritos!

    4 sweet potatoes
    1 package of frozen corn
    2 cans of black beans, thoroughly rinsed
    2 jars of salsa
    4 oz of soft cream cheese

    Put on slow cooker on high for 6 hours. Delish, vegetarian, and kids love it! Any other vegetarian ideas?

    Need more specifics...Do you cut up the sweet potatoes or leave them whole?, peeled or leave skin on?, what size package of corn?, 15oz cans of black beans?, what size jars of salsa? Why are they called burritos?

    Yes, I am serious.

    Cube them, maybe about 6 cups corn? You really can't have too much or too little. I think it's 15oz salsa, and 15 oz cans black beans. And put them in burrito shells (or lettuce wraps if you want to lower the calories/carbs) I hope that cleared it up!

    I made this in my crock pot last night - not only does it taste pretty good, but my apartment smelled AMAZING when I woke up today!


    2 1/2 cups peeled and cubed macintosh apple
    3 cups peeled and cubed sweet potato
    1 1/2 cups cleaned and cubed butternut squash
    1 tablespoon pumpkin pie spice

    2 cups low sodium vegetable broth
    1 teaspoon pumpkin pie spice
    1 tablespoon honey

    Preheat the oven to 400 degrees. Spread apple, sweet potato, and squash on a greased cookie sheet, then sprinkle with the pumpkin pie spice. Roast for 10-15 minutes.

    Transfer the roasted veggies to a crock pot and top with 2 cups of vegetable broth, a teaspoon of pumpkin pie spice, and a tablespoon of honey. Cook on low for 6 hours. Mash vegetables for last half hour of cooking, or use a blender after the soup has cooled to give it a smooth, creamy texture.

    4 servings, 165 calories each.

    well, i have not read all, but besides chilis, stews, roasts etc... one fave is bbq turkey. its so easy..a caveman could do it.

    just put turkey breasts or whatever in crockpot with about a cup or so of your fave bbq sauce and either water or broth to thin it out. cook until tender shredd by hand. add more bbq sauce to liking.

    Clean Eating Slow Cooker Spinach And Chicken
    (Makes approximately 4 quarts)

    Ingredients
    4 large chicken breasts
    1 lb. frozen spinach
    1 (28 oz.) can diced tomatoes
    1 (18 oz.) jar clean marinara

    Directions

    Step 1 – Place all ingredients in a 5 quart crock pot and cook on low for 6-8 hours. It’s done when the chicken easily falls apart.

    Note: Times will vary based on your crock pot. All crock pots cook differently.

    I'm currently making homemade cinnamon sugar almonds. Horrible for you, but LOVE them, and its fitting for fall <3 Smells delicious too :)
