This makes great pulled pork BBQ's and is so easy. Just once try it the way the recipe states and if you aren't happy with the results you can add your own ingredients, but I am sure you will love it. You can always add BBQ sauce to it on the bun if you have diehard fans of BBQ sauce. I personally like it plain with relish....
PORK BBQ CAROLINA STYLE
3-5 lb pork shoulder
1 1/2 c cider vinegar
1 1/2 T Franks hot sauce
2T cayenne pepper
2 T crushed red pepper
2 T brown sugar
s & p
Place meat in slow cooker or oven proof pot, and s & p to season to taste. Then pour in the vinegar and cook 12 hours in a slow cooker on low or 5 hours on high. If you use a pot, simmer on stove or in the oven (350°) until meat falls off the bone. Remove meat to a platter and strain the broth, saving 2 cups of the liquid, discarding the rest of the broth. In the broth add the hot sauce, cayenne, crushed red pepper and brown sugar, stirring well to dissolve sugar.Remove bones and shred the meat with two forks and put back into the pot or slow cooker. Add the broth and let heat through. Serve on toasted buns with sweet pickle relish or the relish of your choice.0 -

Slow-Cooker Taco Soup

Prep Time: 5 min.
Cook Time: 6-10 hours
Ingredients (Serves 6)
1 medium onion, chopped
One 14 oz. can black or pinto beans, drained and rinsed
1 c. frozen corn kernels (I recommend Trader Joe’s roasted corn)
One 28 oz. can or two 14 oz. cans fire-roasted or regular organic diced tomatoes in juices
2 c. vegetable broth
1 T. + 1 t. chili powder
1 T. + 1 t. ground cumin
1/4 t. garlic powder
1/4 t. onion powder
1/4 t. dried oregano
1 t. sea salt
Garnishes: non-dairy or organic sour cream, chopped cilantro, crushed tortilla chips, cornbread, etc.
Instructions
Combine onion, beans, corn, tomatoes, broth, chili powder, cumin, garlic powder, onion powder, oregano and salt in a slow-cooker. Cook on low for 10 hours or high for 6 hours. Adjust seasoning to taste.
Serve with sour cream, cilantro, tortilla chips and/or cornbread, if desired.
This is very similar to a favorite recipe of mine! I don't need the salt, though. I use homemade chicken stock and add shredded chicken. Eat with tortilla chips. Yum!0 -

Last night made a random concoction out of a bunch of these
4 frozen chicken breasts
1 can of jalapeno peppers
1 container of hot salsa
1 can low sodium black beans
2 cups of corn
1 t. paprika
1 t. chili powder
1 t. cumin
2 t. cinnamon
Threw all that in the slow cooker for like 3 hours on high, shredded the chicken, then added a brick of non-fat cream cheese and cooked on high for another hour or so. It was a little juicy, so I actually put about a cup of brown rice in it to soak up the deliciousness and cooked it until the rice was fully cooked. It's super awesome.0 -

So many awesome recipes - gotta use my crock pot more often!!
Here's one of our favorite fall recipies:
Turkey Breast with Cranberries
1 Turkey Breast
15 oz. can whole berry cranberry sauce
1 envelope dry onion soup mix
1/2 cup orange juice
1/2 tsp salt
1/2 tsp pepper
1. Place turkey in crock pot
2. Combine remaining ingredients and pour over turkey
3. Cook on low 6-8 hours.
Have made this twice for Thanksgiving. Also made with cubed sweet potatoes in the bottom. Yum!0 -

-2 medium apples, skinned, cored and chopped
-1 cup Steel Cut Oats
-3 Tbsp brown sugar (I substituted Splenda )
-2 Tbsp butter
-1 Tbsp flax seed meal (optional) - (I didn't use)
-1 tsp salt
-1 tsp vanilla
-1 1/2 cups milk (I used almond milk)
1 1/2 cups water
Mix all together in at least a 3 1/2 cup crock pot . Mine was a 6 quart. Cook on low for 7 hours.
Great to wake up to on a cold fall or winter morning. ENJOY!!

I made this one the lazy way. Frozen boneless, skinless chicken breasts, dumped beans (black, kidney, chili) on top. Added Mexican hominy. Corn. Fire roasted tomatoes, green chilies, chipotle chilies, 1 packet of hot taco seasoning. Cook until done. Shred chicken. Add strips of flour tortilla at the end for dumplings. I've also added green beans and cauliflower to up the veggies and lower calories. It never ends up the same way twice.0 -
This one is AMAZING! I make baked taquitos with the leftovers.
Creamy Chicken Verde Tacos in the Crock Pot
2 lbs boneless skinless chicken breasts
10 oz of salsa verde
3/4 block of low fat cream cheese
Directions:
Place chicken breasts in the bottom of the crock pot.
Dump salsa over the top of the chicken.
Cook for 4 to 6 hours on low depending on the size and amount of chicken breasts. (I usually stick a thermometer in the chicken before the end of the cooking time. Chicken breasts will definitely dry out if cooked too long.)
About 30 minutes before the cooking time is complete, add the cream cheese to the chicken and salsa mixture. (Just set the cheese right on top.)
After the last 30 minutes is up, check your chicken. Shred. If your chicken is sitting in a lot of juice, you may want to spoon some off before mixing in the cream cheese. (You can always add it back in if the mixture needs more liquid.)
Serve on tortillas with all the fixin's and Enjoy!
