Holy cow that looks amazing! I'm going to do this - and I HATE to cook! LOL0
-
Made this today and am practically drooling waiting for the last little bit of cooking time to be up!
I, too, dumped everything in and THEN entered it into MFP.
The numbers I got were:
308 calories, 40 carbs, 4 fat, 33 protein, 65 chol, 912 sodium
per serving assuming 6 servings.
Way off the chart in a lot of areas for me, but since it's already made and I still have the room for it, guess I'll eat a serving and try freezing the rest for future Mexican food cravings!
It sure smells WONDERFUL!0 -
So I've read all the replies and I haven't seen any confirmations of being able to swap plain fat free greek yogurt in for the cream cheese. Anyone want to chime in on that one?
And I know Laughing Cow wedges are pretty high in sodium per wedge. I wonder how the sodium in 6 wedges compares to the sodium in a 1/2 block of 1/3 fat free cream cheese. Anyone?
Anyone have input on the plain fat free greek yogurt instead of cream cheese?0 -
bump....going to make this this week!!!!0

It's in my crockpot right now.0

Can someone tell me what bump is? I'm fairly new to this forum. I assume it means something like, ooh good recipe. I'm going to make this. This does look delicious by the way & I'm going to make it tomorrow night. Thank you for sharing!
If you make a comment on a post you want to save, you will be able to find it.... "bump" is just what people use so it stores a thread under their name But... anything replied will work .0 -

I have this in my crockpot at home, and ate some for lunch today. No chili powder in mine - or cream cheese, and I added a can of kidney beans to the mix.
It was super filling and very tasty.Ingredients:
1lb. Boneless Skinless Chicken Breasts (I put mine in frozen)
1/2 cup of salsa
1 bag frozen sweet corn
1 can of black beans, drained and rinsed
1 can of Rotel Tomatoes with Green Chilies
Chili Powder
S&P
1/2 block of cream cheese (I use 1/3 fat free)
1 small onion diced
Directions:
Put chicken in crock pot and cover with all ingredients except for cream cheese.
Add in chili powder and S & P to taste. I sprinkle it all on the top and add more later if needed.
Cook for 3-4 hours on high, 7-8 hours on low.
Shred the chicken and mix it all in along with the cream cheese until melted. Let cook for another 15-20 minutes until heated through.
Serve over rice or in tortillas as tacos/burritos.
I usually top it with some shredded lettuce and diced tomatoes.
Makes 6 Servings.

I'm on day 3 of eating this! It get's better with age! : ) I didn't put any cream cheese in it. I've made burritos out of it and put plain fat free greek yogurt on top. Delish! (then again, I use plain fat free greek yogurt in place of sour cream on EVERYTHING!)0 -
This sounds amazing, so going to be trying this...0

This is in my crockpot right now. I added onion and garlic to it and will serve it with low carb tortillas. A quarter cup on each tortilla with some scallions with equal 300ish calories for 2. Great dinner! I'm very excited0
