    3 chicken breasts, 1 c salsa, 1 packet taco seasoning. Cook til done, then shred the chicken with forks and roll up in tortillas with some cheese and sour cream if you like. :)


    I make this too but I add black beans, corn and peppers. Great without a tortilla too!!

  • check out www.skinnytaste.com I am currently making the pork carnitas slow cooker recipe and they are fabulous. My family loves it. I have also made the chicken pot pie soup and again it was good. She has easy to follow low fat recipes. Good luck!

  • Latin chicken with sweet potatoes and black beans

    3lbs bone in skinless chicken thighs
    2tsp ground cumin
    1tsp paprika
    1/2tsp ground allspice
    1 cup chicken broth or water
    1/2 cup salsa
    3 large cloves of garlic (crushed or finely chopped)
    1 can black beans rinsed
    4 medium sweet potatoes peeled and cut in 2 inch chunks

    mix all ingredients in a bowl (except chicken, potatoes and beans)

    in slow cooker, combine beans and sweet potatoes, place chicken (which can be frozen) on top, then pour broth mixture over top.
    cover and cook 8 hours on low or 4 on high

    3-4 Frozen Chicken Breasts
    1 Jar of salsa

    Cook on low for 4-6 hours. shred and serve on rice or tortillas

    I use tilpia because I prefer it but theres many you could use
    taco seasoning
    juice of one lime and one lemon
    I usually put a jar of salsa in because I don't like to dice veggies but you could dice peppers and tomatoes and saute them
    sour cream and or cream cheese
    cilantro to taste (first time I did this I learned I HATE cilantro so I omit this)
    garlic or garlic salt.

    cook on low 1-3 hrs, depending on how much you've thawed it, I put tilapia fillets in frozen.
    cut some red cabbage up for topping
    I also warm some vegetarian refried beans.

    Sorry I don't have very precise measurements here, I can't find the recipe I use so just typing from memory.

    BTW I LOVE Crockpots, I would marry one if I didn't like conversation

    I made chicken and dumplings in the crockpot and it's super yummy. My husband and very picky daughter love it.

    2 cans of cream of chicken soup
    1 cup of chicken broth ( I use the low sodium one)
    1 tbs parsley
    salt and pepper
    whatever veggies you like ( I use carrots, red onion, and celery)
    and however much chicken you want. ( I usually add 2 large frozen chicken breasts)

    Cook on high for about 6 hours ( more wont hurt it )

    The last hour take canned biscuits ( I buy the small one that comes with 5 biscuits) then chop them into fours, drop them in the crockpot, continue on high for 30 minutes to an hour, and voila.. Done. :)
