    Also for Chloejrobets... the noodle salad recipe:

    In with cold (pre-cooked) Thai noodles, I put a tablespoon of hoi-sin sauce, 2 teaspoons of fish sauce, and the same of sesame oil. and mixed it together.

    Then I just add whatever you have in the fridge. ... I used: fresh mint leaves, cherry tomatoes, capsicum, spinach, spring onions and a sprinkle of crushed peanuts.

    Wow..I'm impressed with all these great photos....sure hard to believe that eating this healthy and delicious allows us to lose pounds :)

    I blog my meal pictures here http://aldousmom.tumblr.com/ they come straight from my phone as I have them, so they're not on a pic hosting site.

    This is a recent and favorite dinner: tempeh with vegetables (green beans and broccoli) in spicy peanut sauce, over rice noodles. A little higher in fat than my usual meal, but I use this kind of meal during a hard training week b/c I need the calories. Still no added fat to it, though.

    Calories 472
    Iron 20%
    Fat 19
    Protein 19
    Fiber 5
    Calcium 9%

    Wow - that looks delicious. Do you have a recipe?

    My photog skillz are lacking, but here's my veg n cheese crustless quiche. We serve it with baked potatoes on the side. I did have butter on mine, which I logged, but I added it after I took the pic.

    Great idea, really poorly executed in about 5 minutes. Leftovers re-invented.
    Leftover orange soy veg stir fry, with added yam noodles and egg/egg white mixture. Didn't pre-soak the noodles and they were nearly inedible. Topped with some leftover coconut curry chicken pieces.
