Breakfast today
Chocolate banana 'pancakes' with powdered sugar and fresh strawberries
258 calories, 37 carbs, 3 fiber, 111 Sodium, 17 protein0 -
Grilled turkey with tomatoes and zuchinni... added a gouda (light) slice and still 250 calories. I almost could not believed it.
Potato salad, 300 calories a serving (I used plain mustard, just a little, for dressing)
Sweet and spicy rice with sea food, 350 calories a serving
Mouth orgasm... cantaloupe with jambon... mmmm....
Huge portion of `there was something left in the kitchen before going to grocery shopping` stew... huge portion, 500 calories.

I usually just scramble my eggs with cheese but I had to get creative today because there's almost no food in the house (come on, payday, I need to go shopping!). Today's lunch is asparagus sprinkled with black pepper and two eggs scrambled with 1/2 cup canned seasoned tomatoes. My daughter was quick to inform me that my food is stinky, haha.

I cooked a lot fancier than usual this weekend, so if I may be permitted to humblebrag...
Yesterday: Mushroom, spinach and prosciutto risotto.
Light whole wheat bread from Artisan Bread in 5 Minutes a Day in the background, although I'm still tweaking that recipe to get better texture.
And today, zucchini, goat cheese and prosciutto “pizza” with sweet potato crust (I’m not gluten-free. I just happened to have sweet potatoes and the desire to try something different. Can't say it was worth it. I will be sticking with regular pizza crust next time). Also, I had too many toppings so I just roasted up the extra zucchini.
