Great idea! I make an omlet most mornings, but if I cook everything in a muffin cup I can reheat the next fewdays and save myself some time. I'll just throw in whatever veggies are in the frig.0

The recipe sounds great: spinach and mushrooms, per calorie, appear at or near the top for most of our essential micronutrients. Eggs and mozzarella cheese, of course, are both great sources of protein and micronutrients as well.0
