    Slow Cooker Chicken and Dumplings (we add in a pound of baby carrots as well and sub chicken broth for water):

    Taco Soup (this looks harder than it is, all you do is open cans and dump in the crockpot!)
    Ingredients:
    1 large Onion, chopped
    1 pkg Taco Seasoning
    2 cups Whole Kernel Corn, frozen (or use 1 can)
    1 can Chicken Broth
    1 can Black beans, undrained
    1 can White beans, undrained
    1 can Refried beans
    1 can Diced tomatoes (Mexican flavor or Rotel)
    1 can Diced tomatoes (any flavor)
    1 pound Ground turkey (optional -- it is good either way!)
    Directions:
    Spray large pot with nonstick cooking spray or olive oil. Soften onions and brown ground turkey. Add all other ingredients. Simmer, covered, 1 hour on the stovetop or place ingredients in crockpot and cook on low all day.

    Crockpot Oatmeal -- this makes a massive amount of oatmeal!
    2 cups Steel cut oats (must be steel cut or they will get mushy!)
    8 cups Water
    2 tsp Cinnamon Optional toppings:
    1/2 cup Brown sugar 1 cup bananas
    1 Tbsp Vanilla 1/2 cup chopped walnuts
    2 Apples, diced
    1 cup Raisins
    Directions:
    1. Add the first 7 ingredients (oats to raisins) in a crock pot. Stir. Set the pot on low and go to sleep. (This is what makes it so cool!)
    2. Wake up in the morning and go to the kitchen at breakfast time. Stir oatmeal. Add bananas and walnuts if desired as toppings. Yum!

    A favorite in our house is as follows:

    4 chicken breasts
    2 cans Campbell's low fat cream soup (we use chicken, but you can use anything)
    1/4 cup cornmeal
    1 TSP flour

    Throw the chicken breasts in the bottom of the crock pot. Pour the 2 cans of soup overtop. Cook on low 8 hours or high 4 hours.

    1/2 hour before finished mix cornmeal & flour together. Sprinkle on top of mixture.

    The result? Yummy creamy chicken with a cornbread type crust on top. YUM.

    I love my crockpot but for some strange reason only use it during the winter!! You guys have posted some really delicious-sounding recipes! I need to dig mine back out and dust it off!!

    This is my favorite and it's an easy one pot dish!!!

    Place boneless skinless chicken breast in the crockpot
    cut 1 potatoe per person in 1/4 pieces
    Add 1 bag baby carrots
    1 Sliced onion
    to the pot

    Cover with 1.5 cups lite ranch dressing and 1 cup water
    Set on medium

    When ready to eat serve with lite busciuts or lite bread and enjoy.

    A favorite in our house is chicken and rice. I have a big family so I tend to cook in bulk, however you can use only one of everything instead:

    Chicken breast (cut into chunks)
    2 cups of rice
    2 cans of golden mushroom soup
    3 can fulls of water (give or take)

    mix it all up and let it simmer. It is delicious. Add a salad and you have a meal. :)

    I've done ribs in mine. Slice up some onion, put in bottom. Next put in the ribs and pour your choice of bbq sauce on top. Leave on low for the day and by the time your ready to eat, the meat is falling off the bone. It's lovely.
