    I make a muffin with box of spiced cake mix and 1 cup water, one cup of bananas. Spoon 1/8 cup of mix in standard muffin pan and follow temp on box. Do not add egg or oil. These are great when I crave banana bread taste exactly the same. They are about 1/2 size of full muffin but only 57 calories each so. Have 2 :)

    Also try 1 box any flavor cake mix 1 cup of water and 1 cup light Greek vanilla yogurt. Standard muffin pan and 1/2 size of standard muffin, no oil or eggs. They are 63 cals each ( about 28) . I feel that adding the yogurt adds a little nutrition to them

    I have got to try this one.. sounds interesting. Do you know what the shelf life is like? In other words can I make a batch on Sunday and have them for the rest of the week?

    I tend to keep them 5 days maybe 6, been making these for about 4 months, also try different favors of yogurt. I made yellow cake with strawberry yogurt nd they were great too

    I know it will be higher calories but I will probably use regular soda, has artifical sweetners in diet soda are not good for you and gives me a big headache.

    Is there a specific kind of cake mix to use? I just bought Duncan Hines and it's 160 for 1/12 of a package (makes 12). That is nowhere near 19 cals, lol. Any suggestions? Thanks!

  • The math isn't adding up here. There are 2000+ calories in a box of cake mix, so for these to be 19 calories you'd have to get well over 100 cupcakes from one batch of cake mix.

    She made MINI cupcakes. She noted in a post later on that if you make 24 regular sized cupcakes its about 90 calories per cupcake.
  • Yes, I get that... but that still means you'd need to get 115 or so mini cupcakes from a batch of cake mix. That's TINY.

    Are you sure? Don't the calories on the box include the eggs and oil you would normally add?

    The box of Funfetti, just the mix without eggs/oil is 180 calories per serving and the box has a total of 12 servings=12x180=2160. she made 48 mini cupcakes. So the total calories for just the box mixture is 2160/48=45 calories per cupcake. Even if there are miniscule size cupcakes and divide the 45 by 2, then I get 22.5 calories for miniscule cupcakes.
