and 3) Cauliflower pizza crust
Ingredients:
1/2 head of cauliflower
1 egg
1 cup of skimmed mozzarella cheese
Fresh oregano and thyme to taste
1. Use a cheese grater to 'rice' the cauliflower.
2. Microwave cauliflower on high for 6 minutes until cooked.
3. Stir in egg, cheese, and herbs.
4. Press the mixture onto a baking sheet, moulding into a pizza base form. You'll want to press it quite thin, but not too thin that it won't support your toppings.
5. Bake on about 375F or 180C for 15 minutes until browned.
You can then top with sauce, cheese, and any toppings you'd like and broil in the oven for an additional 10 minutes or until toppings are browned. Enjoy!

Lunch~
Beef burger patty topped with a fried egg, drizzled with hawaiian sauce. Shredded lettuce and cabbage was eaten with a sesame salad dressing.

It was going to be chicken pasta bake, but my trainer cancelled our training session, so I switched out the pasta with pumpkin.
THEN my trainer called and said 'session on!' ... So in went some cheese

for 4 servings...
1 heaping Tbsp of hot polish mustard
2-3 Tbsp apple cider vinegar
lots of cracked pepper
2 tsp greek yogurt
Shake it all really well in a small jar and that's it. It's very tart but I like my dressing to be a little zippy. Not a big fan of oil and vinegar.0 -

Also, that squash and beef... oh my. How did you prepare the beef? Squash is my absolutely fave thing about winter. Can't get enough of baked squash!0 -

What a great idea! I had shepherd's pie tonight for dinner with regular mash, but I'll have to try it with cauliflower next time.
