    and 3) Cauliflower pizza crust

    Ingredients:
    1/2 head of cauliflower
    1 egg
    1 cup of skimmed mozzarella cheese
    Fresh oregano and thyme to taste

    1. Use a cheese grater to 'rice' the cauliflower.
    2. Microwave cauliflower on high for 6 minutes until cooked.
    3. Stir in egg, cheese, and herbs.
    4. Press the mixture onto a baking sheet, moulding into a pizza base form. You'll want to press it quite thin, but not too thin that it won't support your toppings.
    5. Bake on about 375F or 180C for 15 minutes until browned.

    You can then top with sauce, cheese, and any toppings you'd like and broil in the oven for an additional 10 minutes or until toppings are browned. Enjoy!

    I think I'm having pizza for dinner tomorrow!! Sounds delicious :)

    Eggbeaters with homemade roasted red peppers, chicken, spinach bolani (thin crispy pancake), pico and mango peach salsa, 1/3 an avocado. About 400 calories. Heavenly.

    Here is what I ate tonight. Leftover baked ziti with spinach (skinnytaste.com recipe) and some roasted parsnips and carrots (sugarfreemom.com recipe)

    493 calories and 16 grams of fat

    It was going to be chicken pasta bake, but my trainer cancelled our training session, so I switched out the pasta with pumpkin.

    THEN my trainer called and said 'session on!' ... So in went some cheese

    Yep - but please don't quote pictures!

    for 4 servings...
    1 heaping Tbsp of hot polish mustard
    2-3 Tbsp apple cider vinegar
    lots of cracked pepper
    2 tsp greek yogurt

    Shake it all really well in a small jar and that's it. It's very tart but I like my dressing to be a little zippy. Not a big fan of oil and vinegar.

    Also, that squash and beef... oh my. How did you prepare the beef? Squash is my absolutely fave thing about winter. Can't get enough of baked squash!

    Shepards Pie with Cauliflour Mashed. OMG YUM!! Will deff be making this agian. :love:

    What a great idea! I had shepherd's pie tonight for dinner with regular mash, but I'll have to try it with cauliflower next time.

    Second that! such a good way to cut back on cals and carbs! thanks for posting!

    Oven fried coconut curry chicken, asparagus, the best-ever-roasted squash and salad with homemade dressing.
    Total cals - 354. WIN.
