this was so good! wild/white rice w/ lemon garlic thyme chicken, pita bread, hummus, cucumbers, broccoli + carrots

I found it ages ago and looks like I've screwed up the baking instructions a bit over the last few times I've tried to make it from memory. Next time I'll do it her way and see how it goes ...lol0 -
Dinner tonight, one of my recent faves. Cornmeal crusted fish with homemade slaw, spinach, pico and a corn tortilla (hiding under my mountain of food). Some sour cream on the side and a little hot sauce. About 500 calories total.

Angel hair pasta stir fry with shredded carrots, lamb slices and herbs, with grilled tomato drizzled in dijoinnaise on the side. 600 cals, but pretty good<30 -

today's lunch... "fried" mahi mahi tacos with avocado cream and salsa... only 370 calories and soooo delish.

`Cream` of potatoes+carrot+onion (works just fine made as mashed potatoes, but I like it to be finely blended) served with fennel cooked with brie and bacon. It may seem over the top, but it's a 500 calories meal and it is so good that it is almost madness.
Another 500 calorie meal: whole wheat linguine with brie, bacon (some left over from the previous :laugh: ), red pesto and olives.
