Spinach and carrots, and I eat them raw. I like the crunch!0

Carrots:
peel them, chop them, steam them for 10-15 minutes (determine the cooking time by trying to stick a fork in them after 10 minutes to see if they're done). I usually add some frozen peas 5 minutes before done steaming.
Then add a tiny bit of butter and sugar to bring out the flavour.0 -
Heirloom tomato cut thick cheese sprinkled on top with some garlic and broiled till cheese starts to brown. Eat with a knife and fork. Drool.0

Mine is kale, and I saute it in olive oil with garlic and onion.
Have you tried making kale chips? I've heard really good things about them but haven't tried them yet.0 -
Anything in frozen bags is easy enough for me. I usually buy frozen broccoli, carrots, or mixed vegetables and then heat it up in the microwave and either bake it with some soy sauce or toss it in some olive oil and stir fry with chicken or with other vegetables. I don't always have access to a car so shopping is sometimes difficult... so frozen vegetables are my lifesaver.0

-Onions ON EVERYTHING.
-Green peppers, sliced/diced in food or stuffed and roasted!
-Poblano peppers, stuffed and baked - fried with egg batter and cheese on a cheat day.
-Spinach, used in salad or wilted into my favorite dishes.
-Asparagus, grilled with some olive oil.

When you say fried with egg batter for the peppers, what do you mean by that, breading them?0 -
Brussel Sprouts. Sauteed in olive oil, with a slice of bacon crumbled on top and a bit of sea salt. YUM!!0

i found taking mashed potatoes - and mashing into them steamed cauliflour(howeveryouspellit) is pretty dang good! lol0

I love asparagus. Grilled, blanched or sautéed or any way I can get them. Celeriac is my favorite in place of mashed potatoes mashed vegetable. The roasted carrots sounded good. Try it with a little cumin and orange juice next time...divine. Green beans are fantastic. Little zucchinis or eggplants can be hollowed out and stuffed with the fillings of your choice. There is no end. Vegetables never have to be boring.
Eta- I almost forgot roasted red peppers. They taste amazing on sandwiches, in omelettes in anything.0 -
I'll have to try these roasted brussell sprouts with the crunchy outside. Last time I had them mother boiled them to a soggy mass.
Asparagus, Mushrooms, Onions and Tomatoes are my faves.
I quite like zucchini, onion and tomato fried up as a side dish.
But Kale is my fave since I recently started watching my diet. Not because I like the taste or texture, because it's so benign when added to a stir fry or even a fruit smoothie, but feels like I am adding the equivalent of a great multivitamin capsule to the dish for each cup I use.0 -
Fried green beans (but baked) ummm! Or cauliflower boiled and mashed with a little bit of light sourcream or low fat ranch dressing. These little tricks keep me away from french fries and mashed potatoes:)0

Ooooh ...or what about caprese style? Fresh heirloom tomatoes with slices of buffalo mozzarella, fresh basil, olive oil and balsamic vinegar. If you want a show stopping salad variate between red and yellow slices of tomato and stack it like a Napoleon. Top the stack with baby pea shoots or sprouts and drizzle the vinegar and oil over top or on the plate.0 -

My all time favorite is spinach - wilted, with a little salt, pepper and (sometimes) butter.
I've just really discovered sweet potatoes - I made roasted sweet potato "chips" the other night - little rosemary and olive oil and roasted in the over.
Broccoli is always good too - roasted, raw, cooked with olive oil and garlic.

I love broccoli, steamed, then stir fried in olive oil with crushed chillies. Perfect over some plain pasta... yummy!0

Steamed asparagus and raw sugar snap peas are probably my favorites. I could eat an entire bunch/bag in one sitting... especially if there's hummus involved.0

My fave is parsnips (the sassy older sister of the carrot) - toss in olive oil, salt, pepper and roast in the oven at 350 for 25-35 min, until golden brown and soft.
They're a great root veggie and when roasted have a refreshing sweetness to go with the tartness they carry uncooked.0 -

Lacinato Kale! I make a dressing with a little olive oil, a lot of lemon juice, red wine vinegar, shallots, garlic, & a little dijon to help everything emulsify. Cut the (washed) kale into ribbons and let it rest with the dressing for an hour or so. I mix and match fresh herbs depending on what I have (parsley, mint, tarragon, oregano) and same thing with other veg (roasted peppers, sun dried tomatoes, grilled zucchini, really whatever you feel like), but it's excellent with just the kale & dressing too. If I want to make a meal out of it I add a couple of cups of quinoa cooked in low sodium chicken stock.0

Plain old roasted butternut squash, or roasted up alongside a sweet potato, blitzed with some vegetable stock and a touch of nutmeg for a lovely soup.0

Love red bell peppers. Raw dipped in hummus, wrapped in tinfoil and roasted on the grill or in the oven, sauteed with other veggies, or chopped in thrown in salads they are definitely my favorite. I also love grilled asparagus, or pretty much any veggies tossed in olive oil, salt and pepper and thrown on the grill.0
