todays lunch Whole wheat pita stuffed with Tuna mix and baby green salad with herbs. Threw in a couple extra capers and olives to taste..looks like a face..LOL....

It came to 825 but the portion size was absolutely huge, split into two the calories would be pretty reasonable at 412.

No bake recipe. It's probably my best tasting creation to date
After you make everything, keep in the freezer overnight (24 hours is even better) and then keep in the fridge after
The crust:
100g figs marmalade (figs, roasted sesame seeds, maple syrup)
250g ground roasted almonds
50g organic coconut oil melted
50g coconut almond milk
Filling:
150g 90% coco dark chocolate melted
200g chocolate whey protein powder
120g pitted medjoul dates
100g roasted whole almonds
2tbsp almond butter
250g Dark chocolate almond milk
Topping:
Organic coco powder
Roasted slivered sliced almonds

Dinner for me - Roasted peppers/onion/carrots/sprouts/mushrooms/zucchini, into an omelet with sriracha and fresh homemade pico. With a sourdough tortilla. About 300 cals for the omelet and 80 cals for the tortilla. Boom! :bigsmile:

Dinner tonight was turkey sliders, heirloom tomatoes and veggie chips. The sliders were made from freshly ground turkey from the amish market, homemade pickles and amish rolls sooooo good. working on the picture its being weird0

i love making banana ice cream! how do you make the "soda"?
The soda is a tablespoon vanilla extract, 2/3 loose cup raisins and one cup vanilla flaxmilk, blended smooth. It's a slight modification of a recipe I found here: thisrawsomeveganlife.com/2012/08/banana-ice-cream-floats.html . It was really flavorful! I ended up eating around the bananas so I could drink it alone, hehe.0 -
Made a chocolate mouse/pudding sort of thing tonight out of silken tofu, melted dark chocolate, reduced fat cream cheese (could easily be made vegan by leaving this out and using all tofu), protein powder, and some other things like espresso powder for flavor and egg replacer for thickening. It turned out really tasty! I'm actually going to use it to frost some reduced fat chocolate cupcakes. Around 200 calories and almost 10g of protein for one quarter of the recipe.
