    Using egg whites versus the whole egg can really cut down on the calories and if your watching calories closely that can make a 100 calorie difference. Do you think you could use the egg white stuff you buy in the store for this? I can bring myself to throw away the yoke it seems like such a waste - lol. You can buy a could whey protein powder at GNC or Walmart - just make sure its pure whey with no fillers and additives - personally I try to buy Isolate from the health food store as its lower in calories and more protein in it.

    I made these yesterday using EAS soy protein powder, 1/4 c Egg Beaters, and the rest as per the original recipe. They came out really good, and indeed fluffy. However I really suck at cooking pancakes without burning them, so next time I am going to try using the waffle iron. I'm better at cooking those. I also may try adding some pumpkin puree, as I love pumpkin cinnamon waffles.

    The EAS protein powder scoop was around 42 g, so more than 1/4 cup. it also has more calories, but considerably more protein as well. I have been trying to find the new sugar free EAS protein powder, but can't find it anywhere so far, so I was stuck with the sugar in these for now.

    I made these today and they were super! Following the recipe and the protein powder I used, I got 38g of protein for only 185cal and 7g carbs - totally awesome! I made two pan-sized pancakes and they were decently thick. The batter was a little runnier than I'd like so I may try with one egg instead of two egg whites tomorrow. But overall, great recipe -- THANKS!!!

    These are by far the best protein pancakes I've ever had!!!! Not flat and gross like most I've tried!

    1 scoop vanilla protein powder
    2 egg whites
    1/4 cup unsweetened almond milk
    3/4 t. baking powder
    1/2 t. cinnamon
    2 stevia packets
    1/2 t. vanilla

    Directions:
    mix all ingredients in a bowl. Stir just until they are mixed well. do not overstir.

    Pour 1/3 of the batter into skillet. cook as you would with other pancakes.

    I used sugar free syrup on mine. You could top with fruit, etc...

    I'm thinking of making up quite a few to have ready in the mornings! They are that good!!!!

    Makes 3 pancakes

    125 calories
    4 g carbs
    2 g fat
    23 g protein
    3 g sugar

    This could all vary depending on your protein powder.
