Tried out this recipe (with slight modification - no protein powder and a little more greek yogurt). It's delicious, reminds me of a pierogi with sour cream. My oldest tried a bite and said yuck, but she's not on a diet and doesn't appreciate the lower calories and higher protein content like I do. :laugh:0

I've tried a lot of different protein pancakes and these were by far the best! Super thick and fluffy like pancakes should be! Thanks for sharing!!
I used whole wheat flour, and added a little baking powder, vanilla extract and fresh blueberries... AMAZING!

I made these this morning too. I defrosted some Dole wild blueberries and strained the liquid into a small pan. I put the strained blueberries in the batter. I put a tiny bit of pure maple syrup with the blueberry juice and simmered that. Once the pancakes were done I poured the syrup over them. This is a phenomenal recipe. Thanks for posting.0

I'm bumping this. I've made them several times and they are delicious. So far I've used chocolate protein powder, vanilla Greek yogurt and added some chocolate chips and syrup. Typically 40ish grams of protein and keep me full for hours (my protein powder is only 21g per scoop and 1/4 cup is less than a serving). So much better than regular pancakes! I use a whole egg though. Can't wait to try with vanilla powder and blueberries at some point.
My first ones were a bit dry, but adding a bit of milk helped. This time I'm putting less flour.0 -
