3/4 cup spelt flour or white flour or Arrowhead Mills gf (120g)
1/2 tsp baking soda
1/2 tsp salt
1 tsp baking powder
1/4 cup unsweetened cocoa powder (20g)
2 tsp ener-g powder, or 2 tbsp ground flax. You can omit; the cake just won’t rise as much.
1/3 cup xylitol (64g)
1/8 tsp uncut stevia or 4 nunaturals packets (or 1/4 cup sugar)
1/2 to 1 cup mini chocolate chips (60-120g) (Do not omit. The recipe just won’t be the same if you do.)
1 tbsp pure vanilla extract
2 cups of cauliflower, (250g)
1/2 cup milk of choice.
3 tbsp oil (or omit and increase milk to scant 2/3 cup, for a lower-fat option)
Maybe 40 candles? I don't know. however many you want.

I actually would try this. I'd try the cauliflower cornbread up there too. Neither looks that bad.

Hi all!
My birthday is in a few short weeks and I'm looking for a good cauliflower birthday cake recipe. I'd like it to have only a handful of carbs, and of course no refined flour or sugar and preferably low fat, and high fiber. I'm really trying to make it a clean birthday cake. Thanks for your help!!!

Clean cake is an oxymoron, I think. If you want to avoid everything in cake, then why not just avoid cake and celebrate with some other food? Mixing a mess of foods together to look like cake but taste nothing like it can't end well.

I've been meaning to try this recipe for chocolate cake, but it uses coconut flour instead of the cauliflower you're looking for. Might help someone though!
Prep time: 10 mins
Cook time: 40 mins
Total time: 50 mins
Ingredients
¼ cup of coconut flour
1 egg
4 egg whites
2 Tbs. raw cocoa powder
2 Tbs. cold espresso (or cold coffee from the morning)
½ cup vanilla almond milk
6 pitted dates, soaked and chopped (Sugar free version- just add 2-3 servings of stevia for the whole cake)
½ tsp. baking soda
½ tsp. baking powder
1 dash of cinnamon
1 tsp. vanilla extract
pinch of salt
Instructions
Preheat oven to 350 degrees F.
Grease a round baking pan. You may use any shape you desire.
If using dates, soak until softened and puree with almond milk so you don’t have large chunks. If not using dates, skip this step.
Combine all the wet ingredients in a large mixing bowl (eggs, almond milk, vanilla, coffee). Whisk until combined.
Stir in dry ingredients (all remaining ingredients), and stir until combined.
NOTE: with coconut flour, the batter may initial look and feel like it’s very thin and watery. This will change as the coconut flour starts to absorb the moisture. The overall batter will be thinner than a standard cake batter, this is desired. When baking it will come together.
Bake for 30-40 minutes (depending on your oven settings), or until you can stick a knife/toothpick into the center and it comes out clean.
Let sit and cool for about 10-20 minutes.
Garnish with Chocolate Mousse Frosting.

2 Tbs. raw cocoa powder
1 Tbs. espresso (or cold brewed coffee), optional
1 tsp. vanilla
1 tsp. coconut oil
almond milk to thin (if needed)

Quit it guys, I don't like most sweet things. Most my life I have been like that. I have a lot of taste buds that register the sweet in my tongue and sometime really sweet things feel like a 9 bolt battery on the tongue. I love the idea of savory options for my birthday. Of course if I'm having a get together to have both the sweet cake and something savory for me. Don't beat anyone who wants that. I personally love having steaks grilled for my birthday and than get my kids frozen custard afterword. That way everyone wins. That said since joining MFP my desire for sweets seemed to incress. Since i told myself my macros and put a said limit, I find myself craving it more. It's amazing the power of wanting what you can't have is. Had a piece of cake the other day and just dealt with it being too much sugar for my tastes. I couldn't imagine how it is for people that loved cake and ice cream before restricting. Must take will power to want the cauliflower cake. Hope your birthday is wonderful0

1 2/3 cups flour
1 1/4 cups sugar (can use half white sugar and Splenda if desired)
2/3 cup unsweetened baking cocoa, sifted
1 1/2 teaspoons baking soda
1 teaspoon salt
1/2 cup applesauce
1 1/2 cups skim milk yogurt (or use low-fat or fat-free sour cream)
1 tablespoon vanilla
4 egg whites (or use 2 whole eggs)
Directions:
1 Set oven to 350°F.
2 Generously grease a 13 x 9-inch baking pan.
3 In a medium bowl sift the flour with cocoa powder, baking soda and salt.
4 In another bowl beat the sugar with egg whites and vanilla until well combined.
5 Mix in the yogurt and applesauce until thoroughly combined.
6 Mix the wet ingredients into the dry ingredients and beat on low speed until just combined.
7 Transfer to prepared baking dish.
8 Bake for about 30-35 minutes or until cake tests done (watch closely, do not over bake!).

you need frosting for this cake. use this recipe:
Reeses Pieces Frosting
(Yields almost 1/2 cup)
■1/4 cup peanut butter (or other nut butter)
■4-8 tsp pure maple syrup (click for a sugar-free alternative)
■2 tbsp cocoa powder
■4 tsp milk of choice (or more for thinner frosting)
■3/4 tsp pure vanilla extract
■optional: handful of chocolate chips (the “pieces”)
Blend everything (including chips, if using) in a small food processor or Magic Bullet. If you have a bigger processor, it might be best to double the recipe so everything blends more smoothly. Best to store uneaten frosting covered in the fridge.0 -

Cauliflower Crust Dessert Pizza

Prep Time: 10 minutes
Cook Time: 10 minutes

Ingredients (Serves 1)
■1/4 cup rolled oats
■1/2 cup “riced” cauliflower (pulsed in food processor until fine)
■1 egg white
■1/4 teaspoon vanilla extract
■1/4 teaspoon cinnamon
■5-7 drops liquid stevia (or other preferred sweetener)
Instructions
1. Preheat oven to 425°F.
2. Place oats in a small blender or food processor and pulse for 2-3 seconds (you want some of the oats to remain whole).
3. Place processed oats to a bowl, add remaining ingredients and stir well.
4. Transfer “dough” to a parchment lined baking sheet and spread/shape into a circle about 1/4 inch thick.
5. Cover with another piece of parchment paper.
6. Bake for 5 minutes, removed parchment, flip and bake another 5 minutes.
7. Run to the fridge, grab your toppings and go nuts!0
