Public service announcement to salmon-eaters: it's a million times better cooked to a medium-rare/medium. Fully cooking salmon is totally unnecessary and kills a lot of the beautiful texture and delicate flavour. All this stuff I'm seeing about half an hour cook times and stuff is horrifying.0

Fresh raw salmon sushi (if you can find salmon that was caught THAT same morning).

Hey,
I dont know how to grill salmon but, to cook it in the oven all you do is
1. Put a small amount of olive oil on some foil and spread around
2. Put salmon in center of foil and season both sides with lemon pepper
3. Close foil over salmon (not tight, not to loose)
4. Let cook on 375 for 20mins (sometimes 30 depending on the thickness of the salmon)

I agree that undercooking is way better with salmon. My favorite way to prepare it, besides grilling, is to sprinkle with lots of dill weed and poach it in gently boiling water in a covered pan for maybe 10 minutes and serve with lime or lemon.0 -
My hubby and I love Salmon and it's a fish with lots of texture so can actually be microwaved. I have my butcher remove the skin; purchase the wild caught, sprinkle it with OJ or mango juice ( about 2 tbs on 2 8 oz pieces) and put about 1/2 tbs butter in little pieces throughout the two fillets. I usually sprinkle dill and Nature's Seasoning and depending up thickness, it's about 2-3 mins each side. But I've also varied it and added a handful of almonds and green beans or a very few cherry tomatoes and red or orange peppers. And I've used honey instead if OJ sometimes, too.
I've used. Sprinkle of honey or OJ with 2-3 tbs of Pako crumbs or oatmeal on baked talapia or flounder also. And Fish baked is good with Belgian endive. But I usually roast the endive 10 or 15 minutes first in a drizzle of olive oil and 1 tbs of melted butter and then add the fish for another 15-25 minutes. The endive can be bitter and very black licorice fasting when raw or near raw, but on e roasted, it's soft and sweet.

My wife says this is her absolute favorite salmon on the grill that I make her.
Place salmon filet on a very lightly oiled piece of foil. (or the non stick foil is the perfect)
sprinke with dill (both sides)
salt and pepper to taste (both sides)
thin sliced lemon rounds on top of filet 3-4 (bottom is optional depends on how much lemon flavor you want)
drizzle lemon juice onto filet
drizzle of white wine is optional
wrap the foil by folding top and then sides (we are trying to make the foil packet leak proof but not tightly wrapped)
grill on med to high heat for 5-6 minutes each side. DO NOT OVER COOK!
(because it is wrapped loosely in foil, the salmon will continue to cook after removing from the grill)
Serve by opening the packet at table :-)
Enjoy!
Because the foil is wrapped tight and the amount of moisture, salmon will be more poached then grilled but is nice and moist and flakey.0 -
I've never been able to get my family to eat salmon until I started grilling it - a little avocado oil, pepper, garlic, rosemary...mmmmm....the kids will eat it ALL!! I think with fish, simpler is better, but I gotta admit I'm trying that honey recipe tomorrow!0

Marinate in 3 T honey, 3 T Mirin, 3 T Soy sauce for about 30 minutes, then just pan fry until done! Delicious!0

I bake it for 20-30 min in white wine. Or lemon juice. Or italian dressing. We have also used zatarains blackened seasoning. Oh and I've done olive oil with tomato and basil. I could basically eat salmon ANY way as I love it! You could throw it on some foil on the grill too and do the same as you'd do in the oven.0

I make coconut crusted salmon quite a bit. Cover a fillet with the coconut, both sides and then bake for about 8-10 minutes. I usually have it with a mango salad. Very good, quick and easy.0

1 can salmon (remove bones)
half sleeve of crackers
chopped onion
1 egg

I did this with trout yesterday, but it's a good technique for salmon, too, I think. I recommend it (at least the trout version, I loved it so much):
2 whole trouts / 4 salmon filets
Mix: about 30grams of butter, 1 tbsp of dill, 1 tbsp of parsley, pepper, 1 chopped clove of garlic, 1 chopped onion
Salt the fish (don't be too generous, fish is easily over salted), smear the mixture on the fish (and into, if using whole fish), wrap each fish/filet into aluminium foil individually.
Grill it and flip it every 5 to 7 minutes for 30mins if whole fish and 15mins if filet.0 -
My mom's salmon recipe is the best - she always gets compliments and is so easy. You can grill it, broil it or bake it.
Mix soy sauce, white wine or sake, ginger, and some sugar. I usually add a little garlic too. It is super yummy and so easy!0 -
Enough olive oil to coat skillet (about 2 tsp.) on medium heat. Add 2 tb. soy sauce with crushed or dried garlic and ginger (about 1 tsp. combined), and brown on both sides. Simple, elegant, and oh, so good! I serve it with a fresh spinach salad and it's a great combo.0

By "grill" do you mean "BBQ"? This will work equally well in an oven or hot BBQ. In the UK, grill means broil.
Take a sheet of tin foil, place some chopped veg and dill (fresh/dried, doesn't matter) on it, the size of your piece of fish.
Put the fish on top,
Place a slice of lemon on top of that.
Wrap it up and place in hot oven/BBQ.
Cook for 20 minutes for a fillet, 30 minutes for a half side of salmon.
You can also marinate the salmon in teriyaki sauce (soy sauce and honey), or just soy sauce, if you prefer, then broil (uk: grill) or fry it in coconut oil. Then you can flake it and add it to a chicken or veg stock and serve with ramen or over rice or simply with a salad. The above marinade is made even better if you adhere to the rule of 5 flavours:
Salty: soy sauce
Sweet: honey or maple syrup
Sour: lime juice or rice wine vinegar
Bitter: Shias shing rice wine
Umami: fish sauce0 -
POACHED SALMON
½ c. dry white wine
½ c. water
2 T. butter (give or take, depending on how much you want or don't want) - cut into little cubes
1-½ t. dried parsley
1-½ t. chopped garlic
Salt and pepper
Heat wine and water over medium-high heat in large non-stick skillet for 5 minutes.
Add salmon, skin side down, and dot with butter. Sprinkle with parsley, garlic, salt, and pepper.
Bring to slow boil, reduce heat to medium, cover - poach until done, about 10-15 minutes.
Substitutions:
Sherry wine for white wine
Garlic salt for fresh garlic (fresh is better - if using garlic salt, omit salt above)
Fresh parsley for dried (dried is better in this recipe)
Add tarragon and/or lemon juice - yes/no depending on your taste0 -
