This one is excellent. Only canned item is coconut milk, unless you can find it un-canned. Had it for dinner last night, so tasty!

ETA: used chicken breast instead of thighs, and used smart balance instead of real butter (hubby is lactose intolerant), made it 211 calories per serving.

I added a recipe for jerk chicken to the MFP database that uses only fresh ingredients, a food processor and a crock pot.

Tonight, we are having chicken chili. Lean ground chicken, a can of tomatoes, a can of beans, corn, and seasonings.

Really, once you figure out a good balance of meat/veggies/wet ingredients, you can stick just about anything you want in there and have a good meal come out of it.

If you like spicy food then this is great!

    Mexican Beef Stew (serves 4-6)
    2 onions
    2lb braising/ shin steak
    2 cloves garlic
700g Passata (or tinned toms work as well)
    2 tblsp red wine vinegar
3-8 chipotles chillis (depending on taste) (if dried soak in warm water before destemming & chopping)
    2 Bay leaves
    1 tsp oregano

Brown off the beef, soften the onions & garlic then put everything into your crock pot and cook for 6-8hrs.

Serve with rice/ jacket potato/ corn tortillas and coriander and sour cream/ grated cheddar as you prefer.

Also, you can cook a lot of things in a crockpot even if the recipe says to use an oven. Here's a bunch of tips and conversions if you want to try that: http://homecooking.about.com/library/weekly/blcrocktips.htm

Sooooooooooo... any recipes for one pot meals in the crock pot that do not include cream soups?

I'm going to assume that your babies disfavour the texture and look of cream on their dinner plates. I understand that despite your personal preference@not minding creamy canned soups ~ you want to have your children enjoy their dinner too. :) There are many recipes on Pinterest.

    Here's one to get started

PALEO SLOW COOKER BALSAMIC CHICKEN RECIPE

    Ingredients

8 boneless, skinless organic chicken thighs
    4 Garlic cloves, minced
    1 Tbsp fresh basil
    1 bunch fresh rosemary
    1 tsp onion powder
    1/2 onion, diced
    1/2 cup balsamic vinegar
    1/4 cup coconut oil
    Salt and pepper to taste

    Instructions

Combine basil, salt, pepper, onion powder and sprinkle over the chicken

Add coconut oil and minced garlic, onions to the bottom of the crock pot.

    Place chicken on the top

Pour balsamic vinegar over the chicken and add rosemary.

Cover and cook on high for 4 hours.

I haven't tried it with flavored balsamic vinegar but will be next time I make this.
