    I bought all the stuff and have looked out my muffin tin. Don't make a lot of meatloaf (not that popular in UK) so quite looking forward to trying these.

    Made these last night.... I never get tired of them :laugh: Wish I had some for lunch today :tongue:

    I only had 2 out of 12... My 1 teenager and his GF ate the rest :noway: :laugh:

    I started doing this years ago... it's great for picky eaters or when everyone wants the end pieces lol...

    I use my muffin pan for many things... hmmm maybe I should actually make muffins sometime lol

    I only did half the recipe to see how it went down with husband and toddler. I used Turkey mince asI thought this would be lower fat.

    Took forever to cook. I had them in the oven for over an hour and still not convinced cooked through. Had to feed my toddler an emergency dinner as he couldn't wait.

    Hubby and I liked them though. Then I'll try beef mince next time as maybe that will cook faster.

    This sounds like a recipe I'd like to try, but I don't really like to eat ground beef. Any thoughts on if this would work with ground turkey? I'm a little worried about the consistency.

    6 servings (serving size: 2 "muffins")

    Ingredients
    1 teaspoon olive oil
    1 cup finely chopped onion
    1/2 cup finely chopped carrot
    1 teaspoon dried oregano
    2 garlic cloves, minced
    1 cup ketchup, divided
    1 1/2 pounds ground beef, extra lean (raw)
    1 cup finely crushed fat-free saltine crackers (about 20)
    2 tablespoons prepared mustard
    1 teaspoon Worcestershire sauce
    1/4 teaspoon freshly ground black pepper
    2 large eggs
    Cooking spray
    Preparation

    Preheat oven to 350°.

    Heat the olive oil in a large nonstick skillet over medium-high heat. Add chopped onion, chopped carrot, dried oregano, and minced garlic; sauté 2 minutes. Cool.

    Combine onion mixture, 1/2 cup ketchup, and the remaining ingredients except cooking spray in a large bowl.

    Spoon the meat mixture into 12 muffin cups coated with cooking spray. Top each with 2 teaspoons ketchup. Bake at 350° for 25 minutes or until a thermometer registers 160°. Let stand for 5 minutes.

    Turned out awesome as always! I used a mix of lean beef and venison, tomato sauce that already had added basil, oregano, etc. I used oatmeal instead of the cracker crumbs, added in more garlic, garlic powder, onion powder, etc. I didn't even use an egg, and topped w/ organic ketchup. My family LOVES them in little muffins!!! Leftovers tonight! :bigsmile:

    I bet they'd be good with ground turkey or ground chicken also, just to change things up a bit! I may try them with ground turkey and let you all know... :D
