What are sunchokes like? How do you prepare them? I see them at the local grocer next to the ginger and the jicama but never know what I would do with them if I bought them.0 -

What are sunchokes like? How do you prepare them? I see them at the local grocer next to the ginger and the jicama but never know what I would do with them if I bought them.
They are kinda like potatoes, but have more flavor. You can just roast them with the skin on which is edible, puree or make a soup out of them or fry them up. They can also be eaten raw

that was 2. Nuked for 15secs. squish onto sprayed tray and bake for 5-6mins at 180c. I put the PB on first so the middle was still a bit gooey

Some recent stuff:
I had the hangries one night last week because I forgot my lunch; went home and made these delicious free-form smothered chicken enchiladas refritos. The recipe was mostly an accident born of hungry desperation, but I will DEFINITELY be having these again.
Avocado, tomato, and spinach salad with balsamic, also from the night of the hangries. I couldn't wait for dinner to cook!
This morning's basic-boring breakfast of cinnamon oatmeal, an egg over-easy, and fried ham.
Today's lunch -- spicy tuna over "power greens" (spinach, chard, beet greens). Uncreative, but pretty good for all that.
Breakfast from a few days ago. Scrambled eggs with Old Bay, sliced banana, fried ham.
I may have already posted this. Yummy bean-and-beef soup with veggies from a couple of weeks ago.
Garlic stir-fried veggies and tequila-lime chicken sausage.

Hand rolled pici with bolognese
Super basic but delicious dinner of tuna salad (with tons of dill pickles) on a GF slice of toast, loaded with sriracha!
Then the leftover tuna salad on top of some spinach! I could live off of tuna and pickles.
Totally forgot to take a picture of the massive amount of peanut butter I ate following that. :blushing:0 -
Last night's dinner: T-bone steak (shared with my son), steamed broccoli. I think I overcooked the steak a bit, but it was still delicious.0 -
