    Lettuce wrapped black bean burgers:

    Black bean burgers
    Romaine lettuce
    Tomatoes
    Spicy Guacamole

    put in a crock pot:
    a few chicken breasts
    jar of salsa
    optional can of corn and black beans
    cook, pour over rice
  • Mini BBQ chicken pizzas...

    -1 English muffin, split in half
    -your favorite BBQ sauce
    -chicken, shredded or diced
    -shredded cheese!

    Assemble and pop in the oven for a few minutes until the cheese is all melty. Obviously good for other kinds of "pizzas" too :)

    Easy black bean soup...

    -2 cans black beans, drained & rinsed
    -1 can refried beans
    -1 cup of whatever kind of salsa (I used chipotle black bean salsa)
    -2-3 cups of vegetable stock

    Heat everything in a pot on the stove and blend it up if you wish :) Toppings optional.

    1tbsp chia seeds
    1/4-1/2 cup almond milk
    Cinnamon
    Maple syrup to taste

    I sometimes add cardamom as well...

    Pork And Peanut Curry

    2-3 cups cubed boneless pork loin
    Golden Curry Sauce Mix, 8.4 oz. package
    1/2 cup dry roasted peanuts
    olive oil

    Sautee pork in a tablespoon of olive oil until lightly browned, add curry past blocks ( cut into chunks), with a cup of water, heat through, stirring, until curry sauce is smooth and pork is cooked through, add peanuts, heat a minute or two more, serve.

    Baked Chicken & Cheese Taquitos

    2 Taco size flour tortillas
    1 oz. shredded cheddar
    2 oz. Cooked, shredded Chicken breast meat
    2 tsp. Spicy brown mustard

    Spread 1 tsp mustard on tortilla, add half the chicken & cheese. Roll-up with ends tucked in. Repeat. Place taquitos on foil lined baking sheet. Lightly coat taquitos with butter-flavored cooking spray. Bake at 400 F for 12 minutes. Devour!

    280 Calories

    I'm in love with these things. Sometimes I'll substitute the mustard for hot salsa, sour cream or light ranch dressing.

    ground italian sausage
    1/3 fat cream cheese
    23 jalapenos
    reduced fat mexican blend cheese

    mix the meat and cheese, stuff in peppers, bake at 350 for 20-25 minutes. Yummy. Each Jalapeno has about 50 calories :)

    Always in for good recipes! My current favorite is this protein pancake recipe:

    1/2 cup oatmeal (pulse in food processor or blender)
    Then add
    1/2 cup cottage cheese
    2 eggs
    Teaspoon vanilla extract

    Pulse it all until consistency of pancake batter and fry up like regular pancakes. Sometimes I add a splash of milk to make them thinner. Also good with cinnamon and a little agave or honey to make them sweet.
  • Chocolate peanut butter vi shake!

    2 scoops visalus vi shape protein shake mix
    1 cup unsweetened almond milk
    2 tbs chocolate peanut butter PB2
    Ice cubes

    Or a tie with Visalus chia pudding!

    2 scoops visalus shake mix
    1 cup unsweetened almond milk
    4 tbp chia seeds
    Stevia, to taste
    Let it sit in the fridge for a couple hours, and it's ready!

    Mine is as follows:




    I love tuna cakes!

    1 can tuna

    8 crackers

    1 egg

    lemon pepper



    smash the crackers; mix all the ingredients together well, form patties (I make about 4), and fry. De-lish!

    I do mine with canned salmon instead. :)

    Baked yam patties(pre-made sweet potatoe patties.can purchase in frozen produce section) These babies are great!! You can use a non stick bakers pan.Place in pan sprinkle lightly with organic sugar,cinnamon,nutmeg.Bake in the oven for 5 minutes if thawed,10 minutes if frozen.

    For a quick and easy snack you can put them frozen on a plate without any add ons and stick them in the microwave (2 patties) for about 1 to 2 minutes depending on your microwave. Taste like guilt free sweet potatoe pie either way you go....YUMMY!!!

    I could eat this every single day: Warm Blackened Salmon Caesar Salad.

    Salmon filet, blackened
    Romaine lettuce
    Caesar vinaigrette
    Parmesan cheese

    Top the cold tossed salad with the hot salmon and enjoy. YUM!

    Rice Krispies or granola for texture, as desired
    Choice of sweetener (optional)

    Microwave berries for 30-60 seconds. Add to other ingredients. Add sweetener if desired.

    Easy weekend lunch or evening snack.

    Frozen strawberries
    Ice
    Soy milk
    Organic sugar

    It doesn't matter how much you put of anything, just eyeball it and taste test! Blend it all together and enjoy :)
  • Not a recipe but saves me time after time . . .

    chicken breasts (Costco frozen skinless boneless)

    thaw; marinate in olive oil and garlic (chopped or pressed) . . . I've also added thyme, oregano, other seasonings, etc. You can skip the olive oil but I doubt that it adds a ton of calories. . . .but I could be wrong!

    drain, grill (better slightly undercooked than overcooked - grill just till meat bounces back), cool & chill; wrap individual, bag, and freeze

    I've done an entire bag before; easy to pull out and add to salads, pasta, make chicken salad, add to soups to bump up protein

    Baked italian sausages(4 links per pack) place links in a baking pan.Lightly sprinkle with adobe seasoning,cut 1whole onion and 1whole green bell pepper(any color, I use all the colors for the visual effect and great taste). Bake 30 or minutes or until veggies and links are done...DELISH!!!:tongue:
