    Tonight is going to be sauteed mushroom and asparagus with balsamic vinegar. Noodles (odd item in this meal but that is what my kid picked - it is his night to cook so he gets to decide something) and for protein we are going to clean out left overs. I'll have baked chicken. Kids will have a hamb or tuna salad or hotdogs. Will also have one more veggie that everyone likes. Not sure what yet. Probably corn which hardly counts as a veggie but everyone eats it, lol.

    ETA: You guys have great looking food!

    Beef enchiladas, it was a WW recipe from years ago: 1 1/2 pound lean burger, brown with an onion chopped. 1 can of low fat cream of mushroom soup, 1 can enchalada sauce, 1 cup skim milk, 1 small can of chopped green chilis. Heat. Spoon a little on the bottom of a 9x13 pan. Spoon about 1/4 cup into a medium tortilla and add about 2 tablespoons low fat cheddar. Roll and put in pan seam down. Repeat 9 times. Pour remaining mixture over tortillas and a little cheddar cheese on top. Bake at 350 for 30 - 40 minutes. I serve with fat free sour cream, lettuce, tomatoes, and whatever else you want on top.

    Marinated tuna loin in teriyaki sauce with fresh egg noodles and mixed stir fry veg! Low fat, low calorie but high on taste! Sorry forgot to take a picture before I ate it

    Ham and turkey salad, stir fry veggies and black eyed pea soup. I misread my label and thought I was thawing split pea soup, but this had to have been better than any spit pea could have been. It had ham, tomato, onion, celery, okra, corn and Jalapeno. I added fresh carrot. Very good.

    made a white bean and broccoli soup with white wine and topped each bowl with a panko coated goat cheese medallion. turned out pretty awesome.
  • Hey guys so I need help! IDK what to make for dinner :(.... I have eggs, whole wheat pasta, quinoa, tomato paste, carrots, vegetable stock, chicken cutlet, tomatoes, whole wheat bread/wrap and corn on the cob..
    Any ideas on what to make?

    Sorry, no porn here. I can't upload pics from work. But tonight we are having crudités followed by pan searer sea scallops and spaghetti squash tossed with asparagus, garlic, olive oil and a little parmesan.

    My wife is my customer tonight at work. She has training scheduled, and before it started she took her staff to supper at the North Main Street Station, a local restaurant here in town. I was able to lock up the office and join them. I had the grilled chicken breast salad. It was real good.

    Tonight was a risotto made from black quinoa with walnuts, carrots, sugar snap peas, and parmesan.

    And a Cadbury creme egg.

    Every Sunday I pull out my crock pot and throw in 2 chicken breasts with 2 cups of water ( because Chicken Stock is a complete waste of calories) and then an assortment of the following:
    -corn
    -peppers-
    -beans ( either black or kidney or both)
    -salsa
    - celery
    -mushrooms
    - lots of Cilantro.....so yummy
    - baby carrots cut up
    - spinnach


    I have a cup a night along with a yummy spinach salad.....taah daaaah
    Thanks so much! I am going to give this try...just as soon as I get some chicken breasts..:)

    I ate with my customers tonight. It was smoked pork tenderloin, brown rice and a veggie casserole. All very good.

    Beef tacos with avocado

    Heat pan on medium high
    Once hot, add 1 tsp olive oil
    Brown chopped garlic and onion in heated pan
    Add 5 oz. extra lean ground beef
    Stir in 1-3 tsp chili powder, 1 tsp sugar, fresh pepper and a little sea salt
    Let sit so that meat browns
    Serve on 4 inch corn tortillas (steamed) with avocado and hot sauce to taste

    With 5 oz beef, 4 corn tortillas & 2 oz avocado, dinner works out to 465 cal, and takes no time at all to cook! I'm Mexican, so tacos have my go-to dinner ever since I found a Latin grocer in the market near me that sells freshly made corn tortillas.

    That taco looks good. I might try it with turkey though. I'm about burned out on beef right now.

    Last night my customers sent me home with a smoked pork tenderloin. We had some of it, a salad, corn, honey baked carrots and a slice of low sugar strawberry pie with blueberries. But we skipped lunch and ate early. Now I'm hungry again. I'm casting an eye toward the freezer and another slice of pie.

    Cod burgers! The Hardy's comercial had us dying to try it. We sprinkled with Cod with Chef Paul's blackening seasoning and used big fluffy bakery buns. Green leaf lettuce on bottom bun, then tomato, cod filet, and mashed avocado. They were really good :) calories not too bad for a Saturday dinner either.

    You will need to upload the picture at a hosting site like photbucket.com. Once you decide what to post, right click on it and copy the photo IRL. Come back to the thread, then type img inside two brackets like these [ ]. Paste the copied IRL, then type /img inside two brackets [ ]. I look forward to seeing your pictures.
