I make tons of a lebanese-style salad (lots of raw tomato, Israeli cukes, kalamata olives, parsley, cilantro, mint, EVOO, salt, and the juice of one lemon) to eat at nearly every meal throughout the week. This morning I had that on a bed of arugula with some Goya little white beans, sometimes I swap the beans for a runny-yolk egg, sometimes I add a spoonful of defatted chicken stock for extra flavor...but always tons of arugula. It's tasty, filling, and low-cal with all those raw veggies! (And I often just have the same for lunch since it's so good!!)0
