    Here is a super simple recipe:
    1 jar salsa
    chicken breast (2-4)

    place chicken in slow cooker, throw salsa on top, (I swish a little bit of water around in the jar to get the last bit of salsa out and throw that in too) cook for 8-10 hours. You can put it on top of taco salads, rice, burritos. Last night I wrapped it in a big peice of lettuce and had a wrap. Enjoy :)

    Chicken & Sweet Potato Stew

    Here's a dinnertime warmer with a hint of spring's sweetness, designed for that day when you'd rather be outside raking the leaves from the garden, getting it ready for what's ahead, than slaving over the stove.

    6 servings

    Active Time: 20 minutes
    Total Time: 5 hours 20 minutes

    Ingredients

    6 bone-in chicken thighs, skin removed, trimmed of fat
    2 pounds sweet potatoes, peeled and cut into spears
    1/2 pound white button mushrooms, thinly sliced
    6 large shallots, peeled and halved
    4 cloves garlic, peeled
    1 cup dry white wine
    2 teaspoons chopped fresh rosemary, or 1/2 teaspoon dried rosemary, crushed
    1 teaspoon salt
    1/2 teaspoon freshly ground pepper
    1 1/2 tablespoons white-wine vinegar

    Preparation
    1. Place chicken, sweet potatoes, mushrooms, shallots, garlic, wine, rosemary, salt and pepper in a 6-quart slow cooker; stir to combine. Put the lid on and cook on low until the potatoes are tender, about 5 hours. Before serving, remove bones from the chicken, if desired, and stir in vinegar.

    Make Ahead Tip: Cover and refrigerate for up to 3 days or freeze for up to 1 month.

    I saw this one the slow cooking 365 website someone mentioned, can't wait to try it:

    Pesto Chicken & Sweet Potato

    1/4 cup olive oil
    2 tablespoons lemon or lime juice
    4 garlic cloves
    2 cups fresh basil
    2 tablespoons pinenuts, or walnuts, or sunflower seeds
    1/4 teaspoon pepper
    1/4 teaspoon salt

    4 chicken thighs, or breast halves
    sliced mozzarella cheese (I used string cheese!)
    aluminum foil or parchment paper
    4 small sweet potatoes, washed well, skin on

    The Directions.

    I used a 6 quart slow cooker. In a food processor or blender, combine the ingredients for your pesto. When liquidy, taste. If you need to add more citrus or salt or pepper, do so now.

    In the bottom of a large slow cooker, arrange your chicken pieces. Mine were still frozen. Layer on slices of mozzarella cheese. Pour pesto evenly on top. Cover with a layer of foil or parchment paper. Scrub sweet potatoes well, prick with a fork, and lay them on top of the paper or foil. Cover and cook on low for 6-7 hours, or on high for 4-5. If your chicken is frozen it will take a bit longer.

    If you're using fresh chicken, and your sweet potatoes are quite large, you may choose to swap layers, and put the sweet potatoes on the bottom. Newer slow cookers cook from the sides as well as from the bottom, but some people swear the stuff on the bottom cooks faster.

    Carefully remove the sweet potatoes with tongs, and remove foil or parchment.

  • I love lamb, very naughty but the slow cooker is the best way to cook it and reduce all the fats from it.

    Stick the lamb in the slow cooker, add a very very week gravy covering 2" from the bottom then add to the gravy 2 whole garlic cloves crushed with a knife, add 1 tablespoon of mint sauce, black pepper and pour roughly quarter of a cup of balsamic vinegar over the lamb and let it stew

    Taco Soup

    1 - 2 lbs lean ground beef - brown & drain
    3 cans whole kernal corn, juice and all
    3 cans ranch style beans, juice and all
    2 small cans black olives, juice & all
    1 can rotel
    1 block velveeta cheese -with 2% milk

    Add all ingredients in crockpot, mix well, cook on high 2-3 hrs, and serve. I usually serve with a few Fritos corn chips, to add crunch. Believe it or not, this is not a high calorie dish because it serves MANY!

    I didn't go through the whole thread, but all I can say is I just got the "Fix it and Forget It...Lightly" cookbook for Xmas, and so far I love the recipes I have tried in it. Yummy! I highly recommend that book.

    Poor Man Prime Rib

    1 Chuck Lean Roast
    1 Packet Au Jus mix
    1 Packet dry Italian dressing mix
    1 Can of Beef Broth

    Put it all in the crock pot and cook on low 4-6 hrs. The meat will fall apart and you can put it on a hoagie bun and use the juice to dip it in.

    Pork Loin

    1 Pork Loin
    Brown Sugar
    Apricot preserves
    Coke

    Cover the loin in the apricot preserves and sprinkle brown sugar over the top, put coke around and cook on low for 2-4 hrs.

    Jar of pepperocini peppers
    Optional- a little onion
    little garlic
    jalapeno

    Put beef in crock pot, add jar of pepperocini peppers. Add anything else you want.
    Cook on low all day (8-12hrs)
    You can make a sandwich, wheat tortillas, or by itself

  • Okay, I love pot roast with veggies, pork carnitas for tacos, and turkey salsa chili that I make often, but I just tried a new one that we liked and it's super simple, so here goes:

    Crockpot pineapple chicken:

    Take 3 or 4 boneless skinless chicken breasts, lay in bottom of pan. Season with black pepper and paprika (as much as you want).
    In a bowl, mix 1 can (20 oz) pineapple tidbits-drained (I used crushed and did not drain, because I like the meat to soak up the juice), two T. dijon mustard, and 2 T. of soy sauce (I used Bragg liquid aminos because I am gluten intolerant).
    Pour mixture over chicken. Mince a clove of garlic and sprinkle over top. Cook on high 3-4 hours or on low 7-9 hours.

    We loved it and I recommend serving it over brown rice.
  • Throw a can of cream of mushroom soup in the slow cooker. Mix in a can of water and season to taste (I like adding salt, pepper and basil or thyme). Add a nice slab of beef. Sometimes I also like to add a beef bouillon cube or two. Turn it on to high for 8 hours. I make this is my small cooker so you can adjust this according to what size you need and how much food you want to get out of it.

    I don't suggest using any type of gravy because that can boil over very easily and becomes a pain to clean :)

    Our favorite one is probably a meatloaf recipe I have that I cook in the crockpot. Let me know if you're interested in it and I'll post it (don't have it memorized). I also have a slow cooker lasagna that's pretty good, and I love cooking beef stew and pot roast in the crock pot. I do the same with the pot roast, with the cream of mushroom soup, but also like to throw a couple of potatoes and some carrots in celery in there too!

    I loooooove my slow cooker, especially in the winter when it's cold outside!

    very interested in the slow cooker lasagna. I saw it on the Oprah show and it looked so good! I just wasn't quick enough to write the recipe down!

    Servings: Serves 6

    Ingredients

    3 cans (14.4 ounces) crushed tomatoes
    3 cloves garlic , finely chopped
    2 Tbsp. dried oregano
    1/2 tsp. kosher salt
    1/4 tsp. red pepper flakes
    1/4 tsp. freshly ground black pepper
    2 containers (15 ounces each) fresh ricotta
    2 cups (8 ounces) grated mozzarella
    1/4 cup grated Parmesan
    12 lasagna noodles (about three-quarters of a 1-pound box)
    5 ounces (about 6 cups) baby spinach

    Directions
    In a medium bowl, combine the tomatoes, garlic, oregano, salt, red pepper and black pepper. In a separate bowl, mix the ricotta, 1 cup of the mozzarella and Parmesan.

    In the bottom of a 5- to 6-quart slow cooker, spread a thin layer of the sauce.
    Top with 3 of the noodles (breaking to fit as necessary).
    Spread about 1 cup of the sauce over the noodles and layer with 2 cups of the spinach and 1 1/2 cups of the cheese mixture. Repeat twice more with the noodles, sauce, spinach and cheese mixture.
    Top with the remaining 3 noodles, sauce and 1 cup mozzarella.

    Cook on low, covered, until the noodles are tender—especially in the center of the lasagna—about 3 to 3 1/2 hours.
