    Honey roasted crunchy peanut butter.
  • Some strange but delicious combinations:

    *1/2 cup cottage cheese with 1/4 cup Udi natural granola
    *cook 2-3 eggs with approx. 1/4 cup cottage cheese for the most fluffy and buttery-tasting eggs you've ever had (plus loaded with protein)
    *blueberries coated in plain Greek yogurt and freeze
    *avocado slices with my steak :)

    Quinoa. I can make a pie crust out of it, chocolate chip cookies, nuggets, pilaf, soup. I am going to try pizza crust next. Though I already make a a kick *kitten* yellow squash crust.

    Definitely hummus, I tried it for the first time about 2 weeks ago and I'm hooked. Spinach and Artichoke is my absolute fav, but Roasted Garlic is up there too!

    I've been pretty obsessed with PB2 since I bought my first jar a few weeks ago. I just bought a second jar, along with a jar of the chocolate PB2, which is just as amazing. I use it in my protein shakes and oatmeal. It's not only fewer calories than peanut butter, and therefore easier to fit into my goals, but it's a lot easier to mix into stuff. I still love real PB, but I'm not going to give up my afternoon snack in order to add a measly tbsp of it to my protein shake and oatmeal. Screw that.

    Special K cracker chips! Totally satisfy my cravings for salt and junk food, but at only 110 calories for 27 chips! Love them!!

    It's not the healthiest thing, but I love Nesquick less sugar chocolate powder. It works in cold or hot milk, so I mix it in my plain yogurt, oatmeal, smoothies, etc.

    I like simple, so:

    Cornmeal with maple syrup;
    Coffee with coconut oil;
    Cottage cheese with a bit of orange marmelade;
    Roast butternut squash with light cheese and a bit of freche craime.

    Home made ranchero/chipolte sauce on anything, but especially shrimp tacos
    Indian soup with lentils and coconut milk

    I'll stop now because it's beginning to sound like I'm obsessed in general! LOL

    Zucchini Pizza's!

    Cut a zucchini in half long ways.
    Sprinkle with salt pepper and garlic powder
    Top with some diced tomatoes and some shredded cheese of your choice
    Bake until the cheese is melted and zucchini softens up to your liking.


    AMAZING, they even smell like pizza.

    I have a million foods I love. But I guess my newest obsession would be sugar snap peas. I'd never had them until recently. Lightly steamed with some salt. yummy!

    I thought I "hated" beans. Like navy, great northern, pinto, etc. Um, nope! I hate that fake maple-y "baked beans" in a can stuff (I really do NOT have a sweet tooth at all). But if I make them myself (which is super easy, now that I own a few crock pots), yummy, so versatile, and an easy way to round out my macros for the day. I add them to my spinach salads, mash them with salsa, or as a snack with my greek yogurt. It's "great northern week" (I batch cook once a week); next week is either black or pinto--can't wait.

    Yummy! Sounds delicious. Our friends have a garden, and drop off a grocery bag stuffed with zucchinis and summer squash every summer. I will definitely be giving this recipe a try this year (20 pounds of zucchini will be incoming in about 6 weeks--OY!).

    Coffee protein shakes.

    12 oz of my favorite coffee (K-cup), protein shake mix (1 serving, I prefer chocolate, any brand). Sometimes I'll add a half cup skim milk. With crushed ice, this pretty much fills my blender bottle. Fantastic! I've started every day with this for quite some time now.

    Vega one protein powder. Great added to smoothies, etc, but seriously good just mixed with water. Really.

    Zucchini noodles! They are incredible and so easy to make!

    Use a julienne peeler and peel the zucchini length wise until you hit seeds (save the rest for later, if you want). After peeling, I don't "sweat" out the moisture, I just layer the "noodles" in a tupperware with papertowels in between. I prep in advance, so it's usually about 2 hours before I cook after this step.
    Saute in skillet with a little olive oil, sea salt, cracked pepper, and pine nuts (can be omitted as they are expensive).
    Towards the end of cooking, add a little fresh shredded parmesan cheese.

    All together, this takes maybe 6-8 minutes to saute and 5 to prep. Quick, easy, and extremely tasty!
