    Brussels sprouts! Sliced or shredded, tossed in a little coconut oil, salt & pepper, a sprinkle of parmesan, and roasted at 450 degrees for 15 minutes. I could eat them all day, every day. Maybe I should. :tongue:

    Another for cottage cheese! I had some left over after making moussaka one night, and my boyfriend hadn't tried it before. Now we easily go through 3 containers in a week.

    Cottage cheese in moussaka? Did you use it in the béchamel sauce instead of cream?

    Parsnips are delicious! In the autumn, I enjoy cooking them with carrots in lemon juice, olive oil, and pepper and then mashing them, a lot less starch than potatoes and tastier as well. Do you have a particular recipe?

    I gotta try beets roasted, have only rocked pickled and enjoyed. I also have to look into how to make homemade sauerkraut, love that stuff but prefer homemade to the wine added varieties available in our local stores.

    Couple foods I love that might not be too commonplace:

    Salt Cod (bacalao) - My family hates it - I think from the smell of it cooking. I love it. Prosciutto of the sea! lol After soaking it overnight (with a couple changes of water) I enjoy it straight up poached in water as is, or poached then mixed with potatos and flour to make "salt cod cakes", or pureed (with other ingredients) to make a Brandade.

    Rutabaga - A root vegetable I like boiled and then mashed. Also like it mashed together with either potato, or carrot. I've read it was originally a mix between a cabbage and turnip. Here, in Canada though seems like the term rutabaga is rarely used, and people just call them turnip.

    Raisins :( my downfall , dried fruit!

    Dates - even better. For the bacon lover, Parmesan stuffed dates wrapped in bacon (easy peasy and delicious).
    Gotta go with the beets too - love 'em in a salad.

    A stir fry of courgettes, celery. green & runner beans, peppers, chinese leaves, ginger, garlic, mushrooms, water chestnuts and anything else tthat's kicking around in the fridge. Lovely !

    I love them too. Sliced, sprinkled with a tiny amount of sea salt and some red wine vinegar and left to macerate. Pink and tasty - one of my favourite ways to start and then dress a salad.

    Parsnips are great roasted with just a bit of olive oil and some salt.....I slice them long wise and roast them on a cookie sheet with sliced beets. Just toss with some olive oil.....amazing. They're like candy!

    Also love almond butter and crunchy sliced apple on toast for breakfast.

    Snap peas are my 'go to' afternoon snack

    Asian pears and watermelon

    raspberries

    rhubarb/apple crisp for a dessert treat

    Steak and mushrooms too!

    I will treat myself to a steak 1-2 a month on the grill with sauteed mushrooms. Love a good steak and I will fit it into my calories for the day.
  • I eat a cantaloupe every day. I just cut it in half, spoon the seeds out and then scoop it out. Ahhhhhh it's so great

    umm I REALLY like noodles XD there's something really satisfying about just making noodles and chucking loads of veggies in with it XD mmmm
    lately I've been really utilizing my brothers protein powder for my porridge too, keeps me so full ^-^
