These sound amazing. I wish I would have seen this earlier and I could have made something in time for dinner tonight...and most importantly, gone to the store to get the ingredients to make something tonight!!! My husband will be home from work within an hour and a half and will be starving, so I need to find something that doesnt take too long.

I am reposting my meatloaf recipe. I heard through the grapevine people were interested in it, so here you go! Enjoy! It's one of our favorites!

    Slow Cooker Meatloaf

1-1/2 lb lean ground beef or turkey
    2 eggs, beaten
    3/4 cup milk
2/3 cup fine dry bread crumbs (I've also used uncooked oatmeal)
    2 tablespoons grated onion
    1/2 tsp salt
    1/2 tsp ground sage
    1/2 cup ketchup
    2 tablespoons brown sugar
    1 tsp dry mustard
    1/4 tsp nutmeg

In large bowl, combine eggs, milk, bread crumbs, onion, salt, sage & meat. Mix well and shape into a 9 x 5-inch rectangle or oval. Place in a slow cooker. Cover and coon on low 6-8 hours. Combine ketchup, brown sugar, mustard and nugmeg in a small bowl. Pour mixture over meat. Turn to high. Cover and cook an additional 15 minutes.

I don't have the nutritional value on this, sorry! I'll try and figure it out later and add it in!

My 18 year old son gave me this recipe.

    4 Chicken breasts
    1 can black beans
    1 can Rotel-style tomatoes
1/2 cup or so of water or broth
    salt and pepper to taste.

Put it all in the pot and let it cook. Serving sugggestions: use the mixture to make tacos or serve over rice, or serve with a side salad.

It is very good. I made it last Tuesday for dinner. You can add other ingrediants also. I added onions and some frozen veggies, much to my son's chagrin. ;)

How do I get to the "MFP recipe guide"? I can't seem to find it.

Just go to the Food tab at the top of the screen and search the database for it.

    Slow Cooker Chicken Taco Soup

This recipe is delicious!! I made it and fell in love. It is something that has been made and passed on to more than a dozen friends. It was even a hit at a friend's Rescue Squad banquet as a tortilla dip.

I do not use the can of beer, just water instead but you could probably use a broth instead.

I also make semi-homemade tortilla chips but slicing a tortilla in triangles (or shapes for my kids) and then sprinkling w/seasoning and broil for about 5 minutes - but the cook fast so stand by the oven.

Anyway, I hope you all enjoy this recipe!!

My new favorite comes from Jennieo. You can buy an all white turkey breast and its in a cooking bag. You can drop it in slow cooker and put it on low for 6 hours and its awesome. Throw in some carrots or sweet potatoes and add a little swanson chicken broth and you have a turkey dinner.

  • Here is a super easy one for the fall weather right around the corner.
6 large carrots cut in half and quatered
3 sweet potatoes cut in half and quatered
    1-2 lbs. ham
    1 cup maple syrup

Place the carrots and sweet potatoes on the bottom of the slow cooker and put the ham on top. Pour the maple syrup over and cook 8 hours on low or 4 hours on high. Since there is a lot of water in the ingredients, you do not need to add any.
We like to have mini corn muffins with our servings.

This sounds Really good... I think I am gonna try it tonight for dinner!!

    Thanks For the Recipe!!!
