42 calorie macaroni and cheese!

I found this recipe while searching for low-carb ideas for my shirataki noodles. Anyone tried it? I'm pretty excited, but I just have a feeling it might be too good to be true. Then again, it has been AGES since I've had mac n cheese, so maybe I won't notice too much : P.

Ingredients:
1 bag (7 ounces) shirataki ziti noodles
1 pinch salt
2 tablespoons unsweetened almond milk
2 tablespoons low-fat cottage cheese
3 tablespoons shredded low-fat cheddar cheese
1/4 teaspoon dry mustard
1 pinch cayenne pepper
Directions:
Wash noodles thoroughly in water and pat dry with a paper towel. Place in a bowl and mix in remaining ingredients, adding pepper to taste. Microwave for 2 to 3 minutes until cheese is fully melted.

I tried something similar once. It was completely inedible and actually made me a little sick. Fortunately, the experience did not turn me off of real mac 'n cheese, which I can fit into my calories on occasion.

Okay, I was super curious about this, so I did a little number crunching using the food database here, and I got numbers that were between 43 and 49 calories. So just a liiiiittle bit off, but damn those are still some really low numbers! :)

@SherryTeach That's too bad! I was just thinking that I was going to try this recipe myself… What was so bad about the mac and cheese you ate? Was it the shirataki noodles? I've never heard of them before...

    preach it.

also, that's two servings in the recipe. Don't just copy/paste without checking the sources.

it doesn't even sound 'too good to be true'

    frankly, it sounds like disappointment.

I'd rather have 420 calorie mac and cheese made with elbow macaroni, milk, butter and three cheeses with bacon crumbled on top. Why would you want a 42 calorie meal? Where's the nutrition? Where's the energy? Where's the satisfaction?

That's gotta be more than 42 calories. The noodles alone are 40 calories for the bag. Why not have the real thing?

After taking a look at the OP's diary...I'm just going to leave this here, just in case.

I know how it is to want to lose the weight and want to do it fast, but doing what you are doing isn't healthy at all and it could lead to some serious consequences. Please reconsider what you are doing to yourself.

    agreed completely.
this isn't a sustainable path. You can't live on bananas and milk. and 700 calories per day.

That sounds like two servings of oppression and depression.

Sorry OP, this one is far out of line.

I would probably need at least 10 servings before the hunger pangs would subside...and then I'd need seconds. But if you like it, eat it! :drinker:

This sounds terrible but seeing as how I already have those ingredients and am a stupidly low cal target (for me) I'll give it a crack tomorrow.

    Don't.It'sa trap.

Seriously. I've tried 'mac and cheese' with shirataki noodles before. It comes out horrible. The cheese and the shirataki noodles do not mix. At all.
  • For those saying I have an eating disorder -- uh, first of all I don't log everything I eat in my diary. I'm actually REALLY bad about it. I've been averaging about 1500-2000 calories with exercise. You really shouldn't make an assumption about someone's mental health. Just because it isn't in my diary doesn't mean I didn't eat it. I've actually been really bad about tracking lately because I've been super busy with school.

As for the noodles--yeah I figured it was probably too good to be true but I just wondered if anyone had tried them/if they were worth trying. Thanks for the replies for people who actually decided to respond to the topic.

I tried something very similar & while I have a high tolerance for low carb faux dishes this was disgusting. If ya don't mind yet another low carb cauliflower faux dish, I did like

No harm in trying it! Cooking and tasting new alternative foods is my personal fun hobby even if it might turn out bad. Lol. :)
