Margie {my wife} had supper ready when I got home from work. She had fixed a pot of Brown Crowder peas, ham, a tomato, cucumber, bell, chili and Jalapeno pepper salad. Also had a cheese biscuit from Red Lobster. Later I had some of the Greek peachy vanilla low sugar frozen dessert served with vanilla Greek yogurt. Everything was very good.

Well had big plans for cornflake crusted baked chicken breast, potatoes and broccoli. But a seriously strenuous bike trip laid me low. Sooooo lol. lol So it's Lean Cuisine Chicken Spring Rolls and Lean Cuisine Chicken Echilada Suizza. But hey I"m under my limit. So it works, right?

Pizza bread on crusty Italian loaf with mozzarella, ricotta, and balsamic roasted pear and figs. Step-brother made bread pudding for dessert. Next time I'll try to remember to take photos of what I cook.

Vanilla Greek yogurt, Margarita Yoplait Lite yogurt, granola {X2}, toasted pumpkin seeds, protein powder and fresh strawberries. What started out as a lite snack kept growing until it was a meal.

A simple, very healthy, and delicious creation. Essentially a burrito without the wrap :)

Made bread today to enter in the local county fair, so dinner of spaghetti, meatballs & homemade garlic bread was thrown together so we could get my entries to the fair before the deadline.

All baked today and delivered to the Lake County (Ohio) Fair tonight. I must have set the bar last year for breads, because there were more yeast breads entered this year, including some in a couple of my categories. The judging should be interesting, because some of the competition looks pretty good. I made 7-grain honey whole wheat, Polish sourdough rye, French baguettes (Black & white Epi style), Italian free form loaf, Egg bread, and Cuban bread (Pan Cubano). I had some dough left over and made rye sandwich thins, egg sausage rolls and small loaves of rye and 7-grain wheat. I was in the kitchen from 9 till 5 just dealing with bread, doing my best to make sure the appearance was the best I could do. We're going to the fair Tuesday night for the baked goods auction, rain or shine. Wish me luck!

Let's try this picture posting again....

I had a 1/2 cup of some pinto beans I made yesterday and a half a turkey sandwich on sprouted grain bread, slice of tomato, white onion, sliced mushroom, fresh spinach with mustard. For dessert I had 2 dried apricots and 2 prunes, halved and topped with ricotta fresca, a drop of honey and a piece of pecan.

Good luck. Hope you bring home the blue ribbon. When my Daddy was alive, he made bread a lot. I have his old bread maker, plus one my wife received for a birthday. If I made as much as you did, I would be back up to 240 before I knew it.

I cooked a new bean soup today. This one is yellow eye bean soup. I had never heard of yellow eye beans, but my mom had bought some and ask me to plant them. I had a couple of cups left over after I had planted some, so I cooked them. I served it over white rice. It turned out good. I might add some veggies to it in the days to come. Also had chips and salsa. Then plain Greek yogurt and strawberries.

    2 cups beans
14.5 oz diced tomatoes with chipotle chilis
    9 oz ham
    1 cup diced onion
    1 bell pepper
    3 hot chili peppers
    1/6 Tbs salt
    1/6 Tbs lemon pepper seasoning

I'm making a whole chicken seasoned with lemon, garlic, and other herbs tonight! It's currently in the crock pot, and making my place smell AMAZING.

Bonus: I got the chicken (3.8lbs) for about 4 dollars. WIN.
