    I've gotten a lot of make-ahead crock pot meals from here: http://www.mommysfabulousfinds.com/2013/10/easy-crock-pot-freezer-meals-2.html

    When my mom was sick, I made a month's worth for my father (hopeless in the kitchen), just so he wouldn't eat out every day. He LOVED them. They freeze easily.

    Mostly bumping for future use......but if it hasn't been mentioned already have cooking whole sweet potatoes is super easy. Just wash the tator and toss it in the crockpot until done.

    Italian beef


    Beef roast (3 or 4 lbs works well)
    1 can beer
    1 packet Italian dressing seasoning
    1 jar pepperoncini (sp?) peppers, drained, stem ends removed

    Put all ingredients in slow cooker,nook on low for 8-10 hours

    Should fall apart, makes great Italian beef Sammie's.

    Have done with venison also.

    Does anyone have some really great crock pot meals that require 5 ingrediants or less? I'm just starting to use our crockpot during the week and i need to start at the beginner level hehe. If it was kid friendly, that would also be a plus! :)

    bump. I love easy crockpot recipes.

    I don't have much to contribute that's of any value here, other than things that have been suggested.

    My ultimate lazy crockpot meal is meat (chicken, beef, pork, whatever), some southwest seasoning and BBQ sauce. Shred the meat and serve with a hamburger bun for sammiches, or use a wrap for less calories, or go naked and just eat the meat. :)

    Boneless skinless,chicken breasts, 1 can cream of mushroom soup, can of rotel tomatoes with green chilis, I small onion chopped and sliced,fresh mushrooms, 4 ounces shredded cheese.... Cook till tender and serve over rice or split Grands biscuit.. Don't drain rotel tomatoes, juice and all. Hope you like it..

    Salsa
    Corn
    Black beans

    Serve with tortillas or over rice. Top with a little bit of sour cream, cheddar, and cilantro.
  • My 10 minute prep Favourite dish is a Mexican inspired pulled pork. I use pork shoulder, though, not pork loin, which is too lean..

    Pork Shoulder - cut off any large pieces of fat
    1 jar salsa verde
    2-3 cups coke (not sugar free) - helps break down the pork but leaves no sweet taste
    6-12 cloves garlic, finely chopped.
    Salt & Pepper & taco seasoning -mixed together with the garlic into a paste

    1. Rub S&P seasoning /garlic mixture all over the outside of the pork
    2.Sometimes I will brown the coated pork on all sides before I throw it in the crock pot, but if tight on time I don't bother
    3. throw it in the crock pot
    4. pour salsa verde and coke on top - should almost cover the pork. if not enough liquid I add more coke.

    cook on low for 8-10 hours.
    I take the pork out of the liquid and discard the liquid. shred and enjoy!

    I use it to make healthy tacos, or serve with roasted veggies, or on salads.

  • Google this recipe "crock pot chops that will make ya eat til you pop" it's a dumb name but great recipe. I've subbed the pork for chicken and it was still delish. The only thing I did differently was add a can of rotel with green chili's for a kick and I cut the brown sugar measurement in half.

    Florentine Chicken Lasagna:

    1 lb ground chicken or turkey (or beef if you want)
    4 cups (1L) Tomato cheese pasta sauce or other pasta sauce of your liking (I found a spicy sauce I like)
    2 cups grated italian cheese blend (or whatever you have)
    9 Oven ready lasagna noodles (dry) broken in half
    Spinach - the recipe calls for 20 oz of frozen, thawed ans squeezed dry but I use about 300 g - 400 g of fresh.

    Scramble fry the chicken until cooked through.
    Add the pasta sauce and 1/2 c water and stir (if I'm cooking this on high, I do not add the water and and I find it still turns out watery)
    Layer the ingredients as shown:

    1) 1 1/4 cups chicken mixture
    2) 1/4 cup cheese
    3) 6 lasagna halves
    4) 1/3 of your spinach
    5) 1 1/4 cups chicken mixture
    6) 1/4 cup cheese

    repeat steps 3 - 6 two more times. Top with remaining cheese. Cook on low for 4 to 5 hours. Let stand uncovered for 10 - 15 mins and serve.

    Satay Chicken Stew:
    1.5 lbs of boneless skinless chicken breast cut into cubes
    3 cups quartered fresh mushrooms (I like to put in way more)
    1.5 cups hot salsa
    2 tbsp tomato paste
    1/2 cup crunchy peanut butter

    Throw everything except the peanut butter into the slow cooker and cook on low for 6 - 7 hours or high for 3 - 3.5 hours. Add in the peanut better and stir until mixed. Serve as a stew or on rice.

    Texas Chili:

    3 lbs Boneless beef blade (or chuck) roast, cut into 1/2 pieces (i just bought stewing beef)
    2.5 cups chopped onion
    3-14 fl. oz cans of stewed tomatoes
    3-14 oz cans of red kidney beans (or your favourite beans)
    2 tbsp chili powder

    Cook on low for 8 hours I suppose (I lost the directions)
