My hubby's favorite:
Stew meat (or another cut of beef of your choice) and a jar of your favorite salsa. Cook all day. The meat breaks apart.
My DH likes it just the way it comes out of the crock pot, heaping scoop in a flour tortilla. I like mine over rice and steamed veggies for a complete meal. Hearty and healthy.0 -

One of my favorites that I haven't seen on here yet is chicken philly sandwiches. Throw some chicken breasts, sliced onion, sliced pepper and sliced mushrooms in the crock pot. With mine I usually do 5-6 hours on low or 3-4 hours on high. Then use a couple of forks to shred the meat. These are typically served on buns but I prefer to serve on tortillas / wraps - I get some that are 70 calories so it's a lot better than bread I also add cheese; I like Swiss but any kind will work!0

Boneless Center Cut Pork Chops (or whatever boneless, lean pork cut is cheapest) or boneless, skinless chicken breast... throw it in the crockpot, pour in enough coke/dr pepper/root beer to juuuust cover the meat. Low for 7-8 hours. Take out of the crockpot (leaving the remaining coke and juices behind) and shred. Mix with BBQ sauce! It's so good and so easy.

Chicken breasts with a can of encilada sauce.
Other ingredients are optional: Green onion, red onion, green/red pepper, jalapenos, etc.
Cook on low for 6-8 hours. serve on tortillas.0 -

not healthy but kids and hubby LOVE this one:
4 skinless boneless chicken breast cubed
regular bag of tator tots
cheddar cheese
real bacon bits
1 cup of milk
spray crockpot with cooking spray. Place half tator tots in bottom place a layer of cheese on top, layer of bacon bits then chicken. Then cover chicken with bacon bits then tator tots finish with bacon bits and cheese on top. Pour about a cup of milk then cook on high for 4 hrs or low for 6. As I said not healthy but family LOVES it!!!0 -
These sound great, thanks for this post0

I'm making chicken curry tonight and it's SO GOOD.
2-3 pounds chicken breast or thighs
1 diced onion
16 oz salsa or picante sauce
2 tbs curry
Cook on low 8 hours, add 1 cup sour cream 30 minutes before it's done.
Definitely trying this one-sounds delicious!0
