My lunch Today: Stuffed Tomatoes
2 smallish Tomatoes - cut in half cored and seeded (fresh from my garden - yum)
1 can albacore tuna packed in water
1 slice Kraft provolone cheese - quartered
Drain and flake the tuna - salt and pepper to taste. (Lemon pepper seasonings is particularly yummy.) Fill each tomato half with 1/4 of the tuna. Top each with 1/4 slice of the provolone. Toast in toaster oven or under the broiler until the cheese melts.
Nutrition: 228 calories, 7 g total fat, (0 saturated, 0 trans), 75 mg cholesterol, 430 mg sodium (plus whatever added with seasonings), 5 g carbs, 2g fiber, 3g sugars, 36g protein.0 -

One recipe with "Tuna"
Spicy Tuna Tartare in Sesame Miso Cones
Ingredents:
4 ounces diced #1 sushi grade tuna
1 tablespoon diced pickled ginger
1 teaspoon chopped scallions
1 tablespoon soy sauce/wasabi mixture
2 tablespoons spicy chili mayonnaise
4 ounces butter
1 cup corn syrup
1/8 cup miso paste
1/4 teaspoon salt
1/4 teaspoon Black Pepper
1 tablespoon sesame oil
1/2 cup all-purpose flour
1 tablespoon powdered ginger
1/2 cup sesame seeds (both black and white seeds)....

Salmon Patties (Can also use canned crab, tuna, salad shrimp, etc)
1lb canned salmon (if using salmon keep the bones in)
1/2 c finely minced onion
1/4c finely minced carrot
1/4 c finely minced celery
1 egg
1 tsp mustard
1/2 tsp dill
S&P to taste
enough breadcrumbs or panko to coat patties
I throw the veggies into a food processor to get really finely minced. Mix everything except the breadcrumbs together...if using salmon, work the bones til they crumble into the mix. Form into patties and coat in breadcrumbs.
Bake or pan fry with a little oil til internal temp is 165F, about 8 minutes or so depending on thickness.
**This recipe originally called for 60 pounds of canned salmon so I had to shrink it down a bit...the numbers may be slightly off, but i think it will still be good. The mirepoix (onion//carrot/celery) will add moisture and help hold it all together. You can sub in other veggies if you like...we did it once with sweet potatoes, broccoli and onion and with onion, zucchini and summer squash.0 -

Hi,
Recently had tuna mixed with vegetables and cottage cheese. Sounds strange yes but requires no mayo to get the creamy consistency (you don't have to mash it, just mix in 1/4 c. per can of tuna) and is packed with extra protein. Serve in butter lettuce cups to eliminate bread.

I used to buy plain water packed tuna... then I discovered Trader Joe's No Sodium Water Packed White Albacore Tuna... the rest is History! White Tuna is a whole different animal.
But I am looking forward to the ideas others will be sharing on how they 'do their tuna up'.Tuna cakes (like crab cakes)!
12 oz tuna in water
2 large eggs
celery/ onion chopped
ole bay seasoning
Mix together throw in the over for 30-45 min at 375. great flavor, LOVE THEMTuna patties are where it's at. I don't have any clue what their calorie count is but here's what I do and it is delicious.
Open and drain several cans of tuna, empty tuna into mixing bowl.
Open a pack of saltines and start crushing them over the tuna and mixing them in.
Add an egg or two depending on how much tuna/crackers you are making.
Eventually you get this mixture that you can form into balls, this is what you're looking for
Now heat up a non-stick pan and spray it with some no stick spray.
Form a couple tuna patties and toss them in, browning them on each side.
These things are super delicious solo or with some peach mango salsa. I usually make quite a few all at once and toss the rest in the fridge. They reheat pretty well!

Forget the mayo, mix your tuna with hummus or an avocado or both. I mix and spread over sliced tomatos and cucumbers.0

Tuna patties!
1 7oz can of chunk tuna packed in water drained (some liquid ok)
1 egg 1/2 cup old fashioned oats (40g) ground up in a blender or food processor
About 1/3 cup of finely chopped bell pepper
About 1/4 cup finely chopped onion
A large clove of garlic minced
1 tbsp lemon juice
1/4 tsp celery salt pinch of fresh ground black pepper
Grill em, and done!0 -
