    Made Galleta alle olive with piadinas for dinner last night. My sister decided to experiment on her recipe and use one egg instead of 2 or 3, with almond milk + 5 almonds [slithered]. Surprisingly, her experiment turned out light akin to steamed cake [pudding] ~ and her cake almost had everything imaginable in it >> bananas, chocolate chips, cacao powder, almond milk, almonds .... When she was making it, she'd turned to me and asked, "What else should I add to it?" The only thing is, it was lighter than steamed pudding. Ate mine with Tahitian vanilla gelato. Yum!!

    I made a pot of black eyes for the coming week, so I heated up some of those with some chopped turkey, cheese, mushrooms, carrots, raisins and pepita seeds. Sides of red bell pepper and cucumber.

    A ham, turkey and Colby Jack sandwich with tomato and onion slices, corn casserole, un-stuffed pepper trio, corn and green beans. All very good.

    Dessert was 67g of no sugar added ice cream with 100g of my Greek banana, strawberry, pineapple, peach, mango and granola stir it up.

    Multigrain Scoops with rotel dip, taco meat, black beans and homemade pico with jalapenos and tomatoes (finally!) From our garden...

    Dinner was shrimp stuffed tilapia with a tomato, basil & olives orzo salad. Remembered to take a pic of the fish, just not the salad. Was too hungry @9.30pm after church to think beyond getting food into my belly.

    Rotisserie chicken breast with pepper Jack and tomato slices on a crusty mini baguette. Also stir-fry veggies, mixed veggies, corn and a chicken leg. Very, very good.

    No pic tonight. I had a turkey sandwich with provolone cheese, onions, mushrooms, tomato, spinach and mayo, with a side of red bell pepper sticks and fresh raspberries.

    For dessert I had a 1/2 cup of Ben and Jerry's Cookies & Milk ice cream.

    Taco night for me! Will post pics soon, but not cooking yet(it's 9.26 in the evening, and I am not ready for supper-I just barely woke up). Should be great. Since I overslept, I couldn't my butt to the store to get salad mix and tomatoes. I also had a few other things I needed from the store, too. Ah well..Will go tomorrow..

    Dinner last was was whole Cornish hen, smashed rosemary potatoes, drippings gravy and steamed snap peas. Ate 2 banana/choc/almond cupcakes my sister had made [pic in earlier post] with dark espresso roast [no cream or sugar].

    Those all look amazing but I am especially impressed with the souffle. Oh and the soups and grilled cheese... those are my favorite things! Well done!

    My father in law wanted to go out to dinner last night so we went to a neighborhood Mexican restaurant. In addition to the chips and salsa, I had Chili Colorado in flour tortillas with refried beans and sour cream. It was good, but between nachos on Sunday night and mexican last night, I'm feeling it with all the sodium!

    I had to abort supper plans yesterday evening due to an emotional upset. I ended up having ramen afterwards.

    Tonight's supper(emotions provided they're better) will be tacos. Pics later.

    A sandwich made with rotisserie chicken breast, cracked pepper turkey breast, tavern ham, Pepper Jack, Colby Jack, pickles and tomato slices. Also had mixed veggies and green beans. Very good. Dessert later.
