Turkey sandwich with onion, garlic, avocado, tomato, mushroom, mayo and mustard. Sides of cucumber, macaroni salad and a clementine.

I used the last of the BBQ turkey burger to make a stir-fry with corn, green beans, mixed veggies and stir-fry veggies. Also had a banana sandwich. Then some Greek yogurt and ice cream. I still need several hundred calories, so I'll have some peanut butter and honey when I get home from work.

Kind of a light one, and an early one, instead of one at 3.30 or 4 in the morning. Can't eat past 9 and can't eat until after 11.15 tomorrow. So no treats before bed like usual, and I can only have black coffee or water.
This evening's supper is a single serve bag of Funyuns and a single serve bag of Cheetos Puffs. I ate the full bag of Funyuns, but I gave up on the last 1/4 of the Cheetos Puffs. Water to drink.0 -
Home-made Tomato Soup with Tortellini & Spinach0

French Onion Soup. Tried a new way of making it. I caramelized the onions in the crock pot for 11 hours. THEN added the rest of the ingredients. Turned out FANTABULOUS!
Could you share the recipe?
I didn't use a recipe, but here's how I made it.
4 onions sliced thin into a crock pot
add 2 cloves crushed garlic
add 2 tbsp olive oil
Cook on low for 11 hours
Add 2 boxes (8 cups) of low sodium beef broth, 1 bay leaf, 1 cup of GOOD sherry, some thyme (I like a lot, like 2 tbsps), and pepper. (Hold off on the salt until it's done, the broth might be enough, plus you're adding cheese). Simmer on high for 5 hours or low for 8 hours.
In a broiler safe bowl put a hunk of stale french bread, pour in some soup, and top with gruyere cheese. I'm a cheese fanatic so I use a slice of provolone and on top of that 1 oz of gruyere.
Broil until brown and bubbly. I always toss a little dried parsley on top for garnish.

Today was my lift day, plus I ate later than usual. So supper was pretty big.
The last of the corn salad, mixed veggies, green beans, stir-fry veggies and baguette.
I froze some single serving size bags from the last really big pot of peas we cooked. This was one of them.
I defrosted this soup tonight. It was not labeled, and I haven't looked in my recipe box yet, but I see beans, cabbage, tomatoes, corn and what looks like ground turkey. Very good.

Made a bunch of chicken breasts in the crockpot with some taco seasoning, can of rotel, frozen corn, lime juice and garlic. Shredded it and will use for enchilada filling and assorted other what not. Last night put them over rice with cheese, sour cream, salsa and guacamole.

My sister made Pan roasted South Western Chicken, mac n cheese with tomatoes & mixed greens salad and 2 klondike bars for dessert.
Pan roasted Southwestern. I'd eaten 3 of these prior to actually having my dinner ~ officially for my protein boost. ;P Those were her Tuscan flavoured ones. Soooo moist, tender and scrumptious.
Fundraiser Mac n Cheese ~ was kinda eessh. Not semolina.

I made a lazy man's bacon and cheese omelette, green beans, bacon and toast. All very good.
The volunteer melon turned out to be a yellow meat. Which is kind of weird since there hasn't been any yellow meat melons in the garden since last summer. It could have used a few more days to ripen, but the vines were dying.
I still need calories, so there will be some late night eating going on. Just haven't decided what it will be yet.0
