Slow-Cooker Salsa Chicken

I made this tonight for the first time - and both my husband and I LOVED it! I know there has been a lot of talk about sodium concerns - so i thought id post another option. I used a packet of fajita seasoning instead of the low sodium taco seasoning - it has MUCH less sodium, but all of the flavor you want with the convenience of a packet. I served it over long grain brown rice made with white corn, minced garlic, and a few squeezes of fresh lime. I know we will make this time and time again.0

You could go without the seasoning at all. I never use it and I think it tastes the same.0 -

I make one similar to this
4 chicken breast
1 jar salsa
Cover chicken with salsa ( just enough to where you cant see the chicken anymore)
cook on low for 6 hours.
Shred and return chicken to juices.
Serve on tortillas like a taco!0 -

Made this last week following the OP's recipe. It was really really good, but waaaay to salty for me! Will definately make it again, though next time I'm completely omitting the taco seasoning.0

Had this for dinner tonight... added little more chicken, can of black beans, fresh mushrooms, doubled the sour cream (used fat free so it wasn't as bad!) and doubled the salsa. I nixed the taco seasoning bc I'm not crazy about that flavor unless I'm actually eating tacos... added some minced garlic, cumin, and fresh onion instead. Served over brown rice and it was DELICIOUS! My boyfriend freaked out over how good it was, he kept asking me if it was actually healthy lol. (Granted he had like 3 servings.) I have a little left over chicken and A LOT of left over sauce so I need to find ways to use that up... def gonna pour some sauce over a baked potato later this week... any other ideas for ways to use the sauce up? If nothing else I can just cook more chicken and add the sauce to it. Next time I prob won't use as much sour cream... maybe only half cup like the recipe calls for.
But yeah- great recipe! Thank you!!0 -
