    I made this prior to ever joining this sight and let me tell ya I loved it. It didnt look the best when it was finished cooking but it tasted wonderful. I kept hearing how good salsa was but i had a hard time not associating salsa with chips. I will definately make this again.

    I have a friend who absolutely refuses to eat salsa or mushrooms. So I made this for him with Hunt's Fire Roasted canned diced tomatoes instead of the salsa and cream of chicken soup instead of the mushroom soup. It turned out great (and he actually ate it!). I also add black beans and white beans to mine to add protein and stretch it out a little more. I try to use no or low-salt ingredients when I can find them. I like to let mine cook a full 12 hours on low and it just shreds apart like pulled pork. Super easy and healthy!

  • I'm on a low carb diet so I am trying to find meat recipes that don't have much carbs. I was excited to see this on here and it's in my crockpot as we speak! Can't wait to try it!

  • :smile: I cannot begin to tell you how many times I have made this. My neice's and step sons grad party a few months back I did a triple batch of it and NO KIDDING i have the recipe out to nearly everyone there. My chicken got eaten faster than the other meats that were there.
    Its sooo yummy and soooo easy! Thanks to that person who posted this FOREVER ago. Its made alot of us very happy!

    Bet that was great! Yet to try couscous but hear nothing but good of it. I believe I'll do mine over brown rice. I got the black beans and corn Salsa to switch it up a bit. I also only use 1/4 of a packet of the Taco Seasoning, for my taste that's plenty plus I have yet find the low sodium packets.:sad: :blushing: :noway: So I do what I can with what I can find. Love how it shreds up so nicely in the crockpot!

    What are some of the rest of you putting your chicken over? I love bumpin this thread now and again or jumpin in when another member does to catch up on what everyone is doing to switch it up. Fun to see new ideas:tongue::drinker:

    I think this time I'll cook it on low and smell the house up nicely all day. Often times I cook on high but something you want to savor the smell of low is even better...who needs scented candles when you got the crockpot going:laugh:

    Instead of cream of mushroom try a packet of dry ranch dressing. I make a chili with taco seasoning and ranch that is to die for

    This is a regular in my house now. Hubby LOVES it as well, literally licks his plate lol. Gave it a friend to cook and both her and her fiance loved it as well.

    Number of Servings: 6

    Ingredients:
    4 boneless, skinless chicken breasts
    1 cup salsa
    1 package reduced sodium taco seasoning
    1 can reduced fat cream of mushroom soup (condensed)
    1/2 cup reduced fat sour cream

    Directions:
    Add chicken to slow cooker.
    Sprinkle taco seasoning over chicken.
    Pour salsa and soup over chicken.
    Cook on low for 6 to 8 hours.
    Remove from heat and stir in sour cream.
    Serve with rice.
