    Homemade blacked-peas (cooked with crushed tomatoes, chicken stock, onions, garlic, carrots, salt and pepper) reheated with chopped turkey, raisins, cashews and parmasean cheese. Sides of raw asparagus, red bell pepper and cucumber.

    I used some leftover chicken breast to make a stir-fry. Also had ice cream, Greek yogurt and frozen fruit for dessert.

    2.6 oz. Trader Joe's Organic Brown Rice & Quinoa Fusilli Pasta with 1/2 cup Private Selection Arrabiatta, 3.5 oz. ground beef, and 2 tsp. of parmesan cheese. 500 calories. I had room! :yum:

    Once again I added veggies to Margie's turkey veggie soup. I had the makings for a sandwich, which I planned on having with the soup. But this filled me up, so I'll save that until tomorrow night. Later on I did have low sugar ice cream and Greek yogurt with a small piece of marshmallow fudge cake crumbled up in it. {I was short on calories again}

    Had a roasted turkey sandwich on Alvarado St. sprouted grain no-salt bread with onion, tomato, mushroom, spinach, cheddar, and guacamole. Sides of cucumber and grapes.

    Ribs, green beans, grapes and a slice of crusty French baguette. Pretty good. Also had half a cup of the turkey veggie soup. I'm still low on calories, so I'll find something else as soon as I get home from work.

    Here is the recipe:

    1 1/2 cup of oatmeal

    1/3 cup craisins
    1/4 cup toasted sliced almonds

    Preheat oven to 350F.
    Mix vanilla extract & cinnamon into applesauce.
    Blend applesauce mix with all other ingredients. Let sit for 10 minutes.
    Drop cookie dough, by spoonfuls, onto a parchment paper lined cookie sheet. Flatten cookies into rounds.
    Bake 20-30 minutes, or until golden brown.
    Remove from oven and let sit 5 minutes. Move to a cooling rack.
    Store in a covered container when completely cool.
    Enjoy.

    Mango can be used instead of banana, and walnuts instead of sliced almonds.

    Monday night - salmon with homemade herb butter, garlic shells, and asparagus.

    Tuesday - don't laugh. Hot dogs and Ninja Turtle Mac n Cheese.

    Wednesday - had leftovers from Monday night so I flaked up the salmon and sauteed it in a pan with some frozen veggies and the leftover pasta. It actually tasted better this way than the first time around.

    I hope you enjoy them. We had them several times within a short period and liked them a lot, then haven't had them in months. I need to put them back in the rotation. Thanks for the reminder.

    Larro's Parmesan Romano pork chops, corn, grapes and green beans. Yum yum. This is a new recipe. I changed it up a little, using less bread crumbs than called for. The recipe importer died on me, so I don't know the numbers yet. It was very good. Maybe a little too much black pepper for my wife, but I liked it.

    Here it is as I cooked it this time.

    655g boneless pork chops, cut in strips {I was trying for a pound and a half. This is what I had after trimming}
    111g Parmesan & Romano grated cheese {about a cup}
    57g plain bread crumbs {about 1/2 a cup}
    1 Tbs black pepper
    1 Tbs garlic powder
    1 1/4 Tbs olive oil

    Preheat oven to 350F. Line baking dish with foil and spray with nonstick. Combine cheese, pepper and garlic powder in bowl. Pour olive oil in another bowl. Dip strips of meat in oil then drop in mixture, pressing as much into the meat as possible. Place in baking dish. I added the extra mixture to the tops after I had them all in the pan, to make the numbers come out right. Bake at 350F for 40-45 minutes. Enjoy.
