A salad made with Romaine lettuce, carrot, cucumber, tomato, onion, bell pepper and Cajun rotisserie chicken leg and thigh meat. Very good, but I used the last of the lettuce. Will have to shop.
A ham, turkey, Cajun rotisserie chicken breast sandwich with mustard, cheddar, tomato, onion, pickle and Romaine lettuce. Also green beans and stir-fry with Cajun rotisserie chicken leg and thigh. Both good and hot.

Yesterday evening's supper:
Shrimp Scampi(my mom made it). It was amazing! She made it pretty spicy, but it was still good!(I even asked her if she could send some home with me.
For dessert, jello cake. That was awesome too(my mom does a great job with cooking). My mom also sent me home with that and a couple of krautburgers(yum!).

Tonight will be Pork Schnitzel, celeriac and apple mash, roasted winter vegetables and sweet potato wedges.0

Wish I would not have chosen a green plate for a salad picture, but oh well.
Mixed green and spinach salad with goat cheese, grilled turkey tenderloin, parmesan pepper nut clusters and bolthouse creamy basil greek yogurt dressing. Garlic herb bread broiled with butter and parmesan cheese also.

I skipped lunch today, and Margie is out with her girl friends tonight, so I had an early supper. I had kidney beans with rotisserie chicken {leg, thigh and wings}. Very good.
Butter pecan no sugar added ice cream with my {mostly} sugar free Greek lemon pudding, sugar free Cool Whip and grapes. Yum. And only 222 calories.

Chicken breast sandwich with mustard, cheddar, onion, pickle and lettuce. Also opened a bag of veggie chips. Pretty good.
Green beans, mixed veggies and stir-fry veggies with chicken breast. A lazy man's supper.

We went to Marie Callendars for dinner tonight. I had grilled salmon, steamed carrots and brocolli, and a half piece of their cornbread.0

Went to a truck stop(my favourite one), and I had the chicken strip supper. I had potato soup, chicken strips, seasoned fries w/ salsa, dinner roll w/ butter, and green beans. I skipped the green beans because they tasted a little sour to me. I ended up taking them home to give to my daughter(dachshund). She loved them. Had coffee w/ cream and sweet 'n low to drink w/ a couple glasses of water.0

As far as flavor goes, a little bland, but I cooked up a quick dinner of ham, 4 fried egg whites and broccoli. Although it was bland, it was fast and I am way full.0

I had cabbage rolls for supper. Then to top off with I had the remainder of the strawberry jello cake with ice cream on top. Regular Coke for drink. Also had a glass of water.0

I took a break about 1:00 o'clock this morning to post these to Face Book. I worked until 3:30 this morning, so didn't remember to post them here until now. It was wedding food. And since I had gone to work too early to do my usual AM cardio, it put me over for the day. Not to mention the late night unlogged snacking I did while I was cleaning up from the wedding.

I'm on shift at the fire hall so I've got dinner cooking in the crockpot: chicken breasts, spinach, mushrooms, a small yellow onion, a pkt of mushroom gravy mix and a pkt of ranch dressing mix, with a stick of butter (once divided it is less than a TBSP per serving.) Starting to smell divine!0

Margie cooked a new soup today. It's called unstuffed pepper soup. Peppers, ground turkey, cooked rice, crushed tomatoes, V8 fruit juice, carrot and onion. Very good. {81 calories per 100g} We didn't have as many peppers on hand as we would have liked. And she used a little more rice than I would have if I had been cooking. But I was in bed sleeping this morning when she prepared it, so I can't complain.

Once again no pics from the weekend but..
Friday takeout pizza (Little Caesars) for movie night with the kids
Saturday takeout BBQ from a local place that is pretty good for St. Louis... Brisket, pulled pork, baked beans, a couple of ribs
Sunday I roasted some bone in/skin on chicken thighs with lemon slices, rosemary sprigs, and a potato medley and served with roasted carrots and rosemary olive oil bread. It was really good and really pretty and I can't believe I forgot to take a picture!
Tonight's dinner is already in the crockpot - Italian Beef for sandwiches. Probably sweet potato fries to go with it.

Lots of wedding leftovers in my work fridge.
Pasta salad from tonight's Scholarship Signing party. Very good, but also very high in calories.
I added mixed veggies to the unstuffed pepper soup. Looks more like carrot soup now. Very good though.
