Eggs fried in low-cal cooking spray, frozen vegetables, and some green mush that wishes desperately to be guacamole. It wasn't fantastic, but it was filling and nutritious.

My fridge is overflowing with leftovers. Too many for me to eat before they get too old. Tonight I started with a salad.
A bowl of pinto beans with lots of smoked ham.
Green beans, pork loin and steak. The pork loin is still supper good. I'll freeze some of it tomorrow. Can't bear the thought of giving all of it to the Civic Center cat.

The pie is in the oven, and I am waiting to add the cheese. Yay! I am just one step closer to having my supper. Even though it's like 11.30 in the evening.0 -
Had breakfast for dinner tonight. I tried a new Bob's Red Mill hot cereal of ground brown rice, corn and buckwheat. It was really good. I mixed in pecans, raspberries, raisins, brown sugar, butter, cinnamon, and milk; and a raisin bagel with cream cheese. Not a low-cal or low-sugar meal, but yummy.

I had the Pee Wee football awards banquet at work tonight. They offered to let me eat with them, but it was Hungry Howie's pizza and cookies. So I went with the leftovers once again.
Pinto beans with smoked ham. This was the last of these at work. Not sure how the supply at home is holding out.
Steak, pork loin, chicken thigh {although I didn't eat the chicken after all. I'll take it home for lunch tomorrow} green beans {with pork}. I put what steak and pork I had left in the freezer here at work. I'm sure it will do to make a stir-fry at some later date.
Had half a cup of "lite" ice cream with a few frozen grapes for dessert.

I was at my mom's house yesterday evening for supper, and I totally forgot to take pics!
I had: Porcupines(meatballs with rice in them), on top of chow mein noodles and a side of green beans. The porcupines were in gravy. So tasty! I had water to drink.0 -

I made pesto stuffed chicken with zucchini cakes. It was a new recipe and turned out to be delicious.0

I had a ham, chicken and egg sandwich with Pepper Jack and Colby Jack. Also had green beans, baked beans and a tomato. We bought a case of the tomatoes from Jackson Farms, a local grower, right before the first killing frost. They sure are good. Still have a couple dozen left. I'll be sad when they are all gone.

Made a salad of mixed greens, mixed sprouts, cherry tomatoes, red bell pepper, red grapes, mushrooms, raisins, cucumber, green onion, turkey, garlic salt, and pecorino cheese; a few tortilla chips.

There wasn't enough potato soup left for a meal but too much for a snack or to throw away so I re-purposed it and used it as a base for Macaroni and Cheese. Added a bit of this and that, then baked it with Panko on top...
Delicious and 4 more meals out of it!0
