Last night was carby deliciousness. Homemade Sriracha mac n' cheese. My husband made an awesome creamy, spicy cheese sauce that I could just swim in, ahhh...it was on whole wheat penne and a TON of chopped green onion. On the side, steamed sno peas with lemon juice and fresh basil.

Got a recipe for that mac n cheese? Sounds awesome!

I call this Mediterranean Pasta. Spinach asiago chicken sausage, roasted red peppers, asparagus and artichoke hearts in a pesto cream sauce over pasta. Was supposed to have goat cheese but I forgot to add it. Also garlic toast.

A glass of Malbec and an Oreo for dessert so far. Trying to decide if I should have ice cream or another glass of wine....

    This looks so DELICIOUS!!

Thanks - I love it. I would eat it every week, but my husband isn't as crazy about it as I am, and the kids prefer plain butter noodles. My 3 year old did end up eating a bunch of the sausage from my plate, so that was a plus....

We ate twice tonight. I cooked a big pot of peas and baked a ham roast this afternoon while I was mowing grass. Also had some leftover rice and gravy. We ate early, then ran down to a friends house and picked about 5 gallons of grapes. Would have picked more, but lightning chased us home. I used some of the ham, along with pepper Jack cheese, onion and tomato to make a sandwich to go with the peas the 2nd time around.

Last night I went to Applebee's and ate off their 550 calories and under menu. I picked out the 7oz sirloin with shrimp, and a side of seasonal veggies, and substituted the potato for French onion soup. I had 2 glasses of mango tea to drink. It was wonderful. Then about 2 hours after I got home, I ate a Skinny Cow chocolate wafer bar for dessert, to top it all off.

Homemade black-eyed peas (cooked with crushed tomatoes, beef stock, brussel sprouts, onions, garlic and new potatoes, salt and pepper), fresh corn salad with asparagus, spinach, cherry tomatoes, and a side of red bell pepper. I added a chopped nitrate-free beef hot dog to this serving of the black-eyed peas.

After not feeling up to cooking on Saturday night, going to bed with what can only be defined as 'snacks', dinner last night was spinach + mushroom manicotti with grilled bacon wrapped asparagus spears.

Accidentally burnt my thumb, so it's only the mancotti pic. ROFL

Last night we made beer can chicken, and had wild rice and asparagus with it. I also made our first batch of jalapeno poppers with peppers from our garden - the bottoms got a little burned in our special popper maker, but they were tasty, and SPICY!!!
