the lighting in my room is garbage, but here's dinner. 3 scrambled eggs with cayenne, onion powder, black pepper, and a tiny bit of cheddar cheese. green and yellow beans with carrots, unseasoned because i'm out of garlic powder.
dessert is1/2 c frozen raspberries that i microwaved with a spoonful of chocolate chips stirred into 1/2 c greek yogurt. it's not the best-looking dish, but it's actually the first time i've had greek yogurt with fruit and not found it weird -180 calories,13 grams of protein, and 6 grams of fiber. i'm already wondering how it would turn out if i froze it to replace ice cream...0 -

I have turkey on hand ... so am looking for something to make of it for dinner tonight, a casserole of some sort ... but it cannot contain peas because i don't have any on hand! Someone posted Turkey and Spinach enchilada's ... that sounds good and I probably have everything on hand that I could need for it.
If it is leftover Thanksgiving turkey, I like to make White Turkey Chili with my leftovers. Basically the diced turkey, two cans of Great Northern Beans, a can of diced green chilis, quart of chicken broth/stock, garlic, cumin, cilantro, monterey jack cheese....
You may not have those ingredients on hand though!

This evening's supper: Reruns of what I just barely had for dinner: My version of Shells & Cheese. Probably having either water or Pepsi, depending how much and where I am at with the rest of my 1ltre.0 -
A salad with spinach, cucumber, carrot, tomato, bell pepper, Jalapeno, toasted baguette croutons, smoked ham, rotisserie chicken breast and cheddar. 448 calories with 30g of protein. Very good, even if I did forget the boiled eggs when I came to work.
A smoked ham and rotisserie chicken breast sandwich with tomato, pickle, onion, Colby jack and white American cheese. After that salad, it was a little overkill, but still pretty good.

I made spaghetti and tossed it with a little olive oil, garlic, pecorino, asparagus, Mrs. Dash Fiesta Lime seasoning and a few turkey meatballs; salad of mixed greens, mixed sprouts, portobello mushroom, cherry tomatoes, asparagus, cucumber and pecorino cheese.

I eat the most gigantic salads for dinner, with cheese toast, and orange slices for dessert. Very content. I'll start taking pix.

Made a fruit salad for dessert tonight (raspberries, strawberries, banana, pineapple, coconut, pecans, plain yogurt). Really yummy.

Not sure yet. Unfortunately I have to run another load of dishes before I can officially make that call. I'm thinking either another version of turkeyburger helper, turkey burgers w/ teriyaki sauce(I think my onion is still good, along with the garlic clove I bought). We shall see. If all else fails, I can always make it a Rice Crispies cereal night w/ lots of sugar dumped on top w/ seconds following. Or I could do ramen. Oh, man. Too many choices right now. We will see what I end up making.
I apologize for not posting the pics I took of yesterday evening's supper. I fell asleep in the middle of saving them to my computer and to Facebook. I never really did get them posted to Facebook. If I get them onto Facebook, I will show them all before the initial pics of this evening's supper.0 -
I cooked a pot of pinto beans to use up the smoked ham. We went to town late this afternoon, and had planned on eating out. But nothing sounded good to me, so we swung by Sonic and picked up a Jr burger for Margie. She had her burger and I had beans, along with a slice of onion, tomato and toast when we got home. But I was still way under my calorie goal, so I have had popcorn, almonds, grapes and a carrot since supper, and still need to find a few hundred more calories before bedtime.

We had salmon, broccoli and mashed potatoes and now about to enjoy coffee and some fresh-baked banana bread (made with walnuts and homemade butter, mmmm)0

Made a big salad of mixed greens, mixed sprouts, asparagus, cucumber, green onion, cherry tomatoes, roasted red potato, red grapes, raisins, chicken, pecorino cheese, Mrs. Dash Fiesta Lime seasoning, and a couple tsp of ranch; halved dried apricots with marscapone.

I'm sure my husband would not eat the butternut squash and goat cheese gratin but it sounds amazing and I would love a recipe if you would share!
