Sister and BIL took us to El Jalisco, our local Mexican place, for supper tonight. We shared chips and salsa.
I had the Master Parrillada {steak, chicken and shrimp} Fajitas meal.
Then we shared a fried ice cream. I forgot the picture until we had already dug into it. Take my word, it looked good when it was served. It was all very good, and I have plenty of leftovers for lunch tomorrow.

Margie picked up a rotisserie chicken on her way home. I sliced some of the breast and made a chicken and sausage sandwich, with mustard, mayo, onion and 4 cheese Mexican. I mixed veggies with the leftover steak, chicken and shrimp fajita stuff. I only rolled one up, and just ate the rest of it as is. Also had chips and salsa, and a grilled pineapple slice. It was all very good. Will look into some kind of dessert here in a little while.

Dinner for me was scrambled eggs with chives, a small avocado with lime, salt, & pepper, and a brown sugar/cinnamon/lime sweet potato. Yuuuum !0

I'm sure there are a few pig parts I didn't have for supper, but I had more than my fair share. It was Pink-eyed Purple Hull peas {with ham}, ham steak, bacon, bacon wrapped pork tender loin and corn. I might have used a touch too much dried red peppers on the pork loin. But I did name it Larro's Spicy Dijon pork loin It was all very good.

Just made the best stir-fry I've ever had. For one serving:
4oz (cooked weight) leftover pork roast (measured cooked because... leftovers)
85g raw broccoli slaw, undressed
35g tasty diced apple
1Tbsp peanut sauce (I used bottled)
4-5g sesame oil
1tsp warm water
Saute first three ingredients together until everything is warm and the slaw is tender. Mix the last three ingredients together (I just shook them in a jar); pour sauce over stir-fry and continue heating until just warmed through and apples are only barely soft. Serve over quinoa or rice or pasta or... just shove it into your mouth. I came up with this to rescue a roast that had come out way too dry, and it was perfection.

I know it seems like I eat the same stuff over and over again. That is because I do. Dessert was Angel food cake, strawberries, no sugar added Blue Bunny Butter Pecan ice cream and Lite Cool Whip. It's still good though.
