Boring, but I've eaten the exact same thing for lunch every day at work for years. Salad with lettuce, broccoli, carrots, green pepper and 4 oz of grilled chicken (no dressing), a low-cal yogurt, and an apple.

I admire people who can do this^^^....
I'd be miserable if that was my lunch everyday...
It must be so much easier to lose weight when you can eat the same thing (if it's good for you) every day!

    Man now I'm hungry!!!

I made a big crockpot of veggie and lentil stew yesterday, so I'll be eating off that for weeks. It's tomato based with lentils, yams, kale, spinach, carrots, onions, a little chicken breast, and curry. I freeze individual portions in glass tupperwares and take them for lunch.

Bacon Chicken Salad on Oatmeal Bread. It is chicken, bacon, plain greek yogurt, a little bit of light mayo, green onions and some seasoning. I'm super excited lol.

Today: Black pepper encrusted turkey breast tenderloin, scalloped potatoes with bacon and onion and green bean casserole.
    Tomorrow: a couscous stuffed pepper
The next day: black bean soup with pork
The day after that probably back to dinner leftovers as that's usually where all my lunches come from.

Mine is baby spinach with 3 oz. diced rotisserie chicken breast, cucumbers & tomatoes and fig balsamic vinegar. I also have a banana and a Babybel light cheese, though those are likely to be a late-afternoon snack.

1 cup of coucous and 1 1/3 cups of frozen veggie mix. It's easy to make and different spices and veggies mix things up well. Quinoa would pair well with this meal as well

Chopped salad: fresh picked green lettuce leaves, fresh basil, oregano. Grated raw beet, sugar snap peas, thin sliced sweet orange pepper, organic olive oil fresh garlic, balsamic, thin slivers salami, shredded mozzarella, Italian red pepper. All chopped and mixed up. 400 call - I was satisfied and full for hours and it was beautiful to look at.

I had a quinoa, tuna, pea and corn salad with red wine vinegar/olive oil vinaigrette for my packed lunch in the office. It wasn't the prettiest thing (it looked like it had little white worms!) but it really did fill me up. Just as well it was tasty, I've got the second half for lunch tomorrow.

Today is spinach salad with rotisserie chicken; garlic-seasoned brown rice & quinoa; and pretzel crisps with a laughing cow swiss cheese wedge.

I wanted to try quinoa, how's the texture?
