What do you all do with sweet potatoes?

I LOVE sweet potato! They're sooooo yummy however, I'm not very adventurous when it comes to cooking them! I have done 3 things with them:
-Bake, then add baked beans and such
-Make them into chips (only done this once or twice)
-Most commonly, I cube and boil them, then add veggies and bacon and mix it all together in to a potato-stir-fry goodnesssss
What do you all do with sweet potato?

I roast them, add them to soups and stews, make mash, savory sweet potato cakes, etc. I too love sweet potatoes!0

Sweet potato nachos (leave the skins on, cut in 8 wedges, rub with oil and seasonings, bake, top with cheese, jalapenos, salsa and Greek yogurt). I also like to add them to smoothies with milk, vanilla protein powder and some pumpkin pie spice.0

Put the whole sweet potato on the rack of the oven and bake for 45 minutes! Its delicious and you don't even need any else on it!0

Another user posted a great recipe recently. Microwave a sweet potato and put a mashed banana with cinnamon in it.0

For brownies type in "sweet potato brownies ella" to google and its the first link on deliciously ella that I use0

Slice the ends off, then cut them into 1" slices. Rub a little olive oil on both sides of each slice. Mill some fresh ground black pepper on both sides (Emeril says that you've got to make both sides taste good). Sometimes I'll sprinkle some cinnamon on both sides. Place in microwave until fork tender (about eight minutes). Let cool a bit, then enjoy...they're like candy!0

Cut into chunky cubes and roast in the oven with a few squirts of garlic fry light, or drizzle with garlic oil, sprinkle with cumin, paprika and chilli (add any herbs you like eg dried rosemary or fennel seeds, season all etc). Delicious, I also add to traybakes, make sweet potato and chilli soup and sweet potato, chorizo, chilli and cumin soup is yummy too.0

With baked sweet potatoes I top/stuff them with a little feta cheese, kalamata olives, and some chopped spinach. It sounds like a strange combination at first but the salty/briny taste really balances out the sweet potato!0

I bought one two years ago and used it at least 3 times a week since. After having it for two days, I bought one for my mom. Now everyone borrows mine, so I'm going to be buying more as gifts soon!

Love sweet potatoes, and while the wife will occasionally make fries or something out of them, they're great just with a little butter, salt & pepper. Though adding a bit of sour cream doesn't hurt0 -
Love sweet potato fries! Also, I found a new recipe I love...pulled pork sweet potatoes. Cook a pork loin in the slow cooker. Microwave your sweet potato, add some pork on top and a little bit of BBQ sauce. Delicious!0

I wrap 'em in foil and bake them until a fork pokes through easily. They can sit in the fridge for several days that way. When I want to use them, the skin slides off easily and I can just eat them mashed, put them in soup, turn them into a pasta sauce, whatever. Sweet potatoes are surprisingly good with red cabbage. Also, google 'sweet potato recipes' and you'll find lots of ideas. Today, I googled 'barley sweet potato recipes' and found lots of suggestions so tonight we're having chicken/barley/sweet potato soup.0

Or with ground turkey, carmelized onions, and salsa.
Or with shredded carrots, roasted cauliflower and peanut sauce.0 -
bake with chili powder, salt and then dip them in mayo like fries or Eat them mashed with maple syrup or eat them mashed with cheese/broccoli topping0

My favorites are cube and toss in a little EVOO and garlic salt and roast them or baked plain (nothing on them because they are yummy as is). I love sweet and savory, and some of the suggestion in this thread sound so good. Will have to try some of them.0
