How do you make cheese without adding something to make a cheese product? I'm pretty sure that even is Kraft starts with "cheese" and adds to it, something is added prior to that cheese existing.
I make my goat cheese twice a week. To do so, I bring my goat milk up to 185(ish) degrees and add white vinegar or lemon juice. Curds form, whey is strained through cheesecloth. Without the addition of an acid, the hot milk just runs through the cheesecloth.
Anyway, is there really such a thing as a day without cheese?
